At our house, Sunday night is homemade pizza night! All the children gather in the kitchen and we make dinner together. It's a fun tradition, and my husband learned how to make homemade pizza, so he even gives me a free night to cook every once in a while! Which is 100% amazing!

Since we eat pizza every week, I wanted to try to find a way to introduce a little nutrition into our family's time in the kitchen, so I created this zucchini pizza dough recipe! i use my Vitamix blender Add zucchini to pizza dough in a way that is completely undetectable to my children (and my husband LOL)!

I have tried participating in making pizza doughs with only vegetables (mainly cauliflower), but I don't like it, my family definitely doesn't like it, and it's not as satisfying as a real pizza dough. So this zucchini pizza crust is the best of both worlds – a delicious fluffy homemade pizza dough that tastes amazing, is easy to make, and contains additional nutrition due to zucchini! Win win win!

How is zucchini pizza dough made?

Like my famous homemade pizza dough recipe, this zucchini pizza dough is easy to make! He doesn't even let it up if he's short on time (although it's better when he goes up once)! I will explain this recipe to you step by step to ensure your zucchini pizza is successful! Let us begin!

Yeast test

The first step in making this zucchini pizza dough recipe is to test the yeast. Keep in mind that you only combine 1/2 cup of water with the yeast and sugar. The other 1/2 cup of water should be mixed with the zucchini! Let the mixture sit for 5-10 minutes to test while preparing the rest of the ingredients!

Blend the wet ingredients

While the yeast is being tested, mix the zucchini, the remaining 1/2 cup of water and olive oil in the bowl of a Vitamix blender. I like to mix it until it is completely smooth for the best results, but if you want some nice green zucchini specks in your pizza dough, mix for a shorter time!

Use a Vitamix blender!

You know I mix exclusively with a Vitamix (and I have for a decade)! So it's not surprising that I tell you that the best way to make this zucchini pizza dough recipe is to use a Vitamix blender.

If you have kids who could be hired as vegetarian police officers, then being able to discreetly add zucchini to this pizza dough is pretty good! Fortunately, a Vitamix blender will make the zucchini mix so smooth that the only way an observant kid will be able to tell that the crust is there will have a green tint.

I want to pause and say that I lie to my children about the food they eat. It might take time to tell you ingredients on a plate until they've tried it once, but they generally know what's in it before eating it. Many times, they actually help me add vegetables to our meals!

Combine wet ingredients

Then combine the zucchini mixture mixed with the tested yeast mixture and stir gently to combine until the mixture is homogeneous (uniform).

Add dry ingredients and knead.

Next, add about 2 1/4 cups of flour and sea salt to the wet mixture and stir until the mixture is loose but firm. Flip the mixture onto a floured surface and knead until a soft but slightly sticky dough forms. You may need to add up to 1/2 cup more flour as you knead, just be careful not to add too much.

Let it go up!

Place the zucchini pizza dough in a lightly greased bowl, cover with a damp towel, and allow to rise. I recommend letting it grow for 10 minutes, and for best results wait until it has doubled in size (about 1 hour).

The raise is actually optional, and you'll get a delicious zucchini pizza dough if you don't. However, I do enjoy how light and fluffy the crust is after it has grown!

Stretch it!

Next, it's time to roll out the zucchini pizza dough! If you are transferring it to a preheated pizza stone, I recommend rolling it up on a piece of parchment paper.

If you're going to bake it on a baking sheet, roll it onto a well-floured surface and transfer it to the baking sheet before adding the sauce and ingredients.

Add toppings

This is where it gets fun! We usually double the recipe and make two pizzas! That way, kids can enjoy their favorite toppings (cheese and pepperoni), and mom and dad can enjoy some more adult flavors, like the classic margarita pizza!

We use this homemade pizza sauce recipe on our zucchini pizza! It only takes 5 minutes and is much better than anything you can buy in the store!

To bake!

There are two ways to bake this zucchini pizza dough! On a pizza stone (preferred method) or on a baking sheet!

If you bake on a pizza stone:

  1. Place the dough on parchment paper. Add pizza sauce and toppings.
  2. Use a pizza paddle to transfer the pizza to the stove in the preheated oven.
  3. Bake in preheated oven for 15-20 minutes until the crust is browned at the bottom and the cheese is melted and slightly browned.

If you bake on a baking sheet:

  1. Place the rolled dough on the baking sheet.
  2. Pre-bake the dough for 5 minutes in the preheated oven until it hardens slightly. If bubbles form, stir them with a fork.
  3. Remove from oven and add pizza sauce and ingredients.
  4. Bake an additional 15-20 minutes until the crust is browned on the bottom and the cheese is melted and slightly browned.

Cool & Enjoy!

Remove the zucchini pizza from the oven and transfer it to a wire rack to cool for about 10 minutes. It is better to cut the pizza directly from the oven. If you let it cool down a bit, it will be easier to cut it!

Zucchini pizza dough: ingredients and substitutions

Let's talk about the ingredients and possible substitutions in this recipe!

  • Sugar. The sugar in this zucchini pizza crust recipe is used to help test the yeast. Feel free to use honey, maple syrup, or your favorite granulated sugar. I don't recommend using sugar substitutes!
  • All-purpose flour. Bread flour and pastry flour also work well in this recipe. You can substitute 1 / 2-1 cup of flour with whole wheat flour or white whole wheat flour, just keep in mind that you will probably need to use flour in general if you make this substitution.
  • Zucchini. There is no substitute for zucchini in this recipe, except perhaps yellow squash, as it is very similar. You do not have to finely chop or chop the zucchini, as the Vitamix is ​​powerful enough to mix well. However, I recommend at least cutting it into large pieces to facilitate mixing and measuring.
  • Olive oil. Any neutral oil works well in this recipe! I have used canola oil and avocado oil with great success! You can also use flavored olive oil (like garlic, herb, etc.) to add a special touch!
  • Sea salt. If you are using iodized table salt, you will likely need to decrease the amount of salt to 3/4 teaspoon. I always cook and bake with pure sea salt!

  • 1 cup divided water
  • 1 spoon of sugar
  • 1 tablespoon of yeast
  • 1 tablespoon of olive oil
  • 1 small zucchini 1 cup, diced.

  • Place the dough in a lightly greased bowl and cover with a warm, damp towel and let it rise for 60 minutes (or until it doubles in size). NOTE: This is optional, you can simply bake the dough without letting it rise and still get great results!
  • After the dough has risen, preheat the oven to 450 degrees (if you use a pizza stone, put the stone in the oven while it preheats).
  • Place the zucchini pizza dough on a well-floured surface and roll it into the desired shape and size. (I recommend a 14 "round pizza.)

If you bake on a pizza stone:

  • Place the dough on parchment paper. Add pizza sauce and toppings.
  • Use a pizza paddle to transfer the pizza to the stove in the preheated oven.
