Zucchini noodles with lemon-garlic seasoned shrimp

I love a good spiraled veggies bowl when the weather starts to get warmer. A few of my favorites are Shrimp Zoodles Parmesan, Quick Spiralized Zucchini and Grape Tomatoes and Shrimp Scampi Zoodles.

Today is finally starting to feel like spring! Before you know it, summer will be here and you know what it means…. swimsuit season! I've been diligent in exercising a couple of times a week, but you know what they say – great abs start in the kitchen, and that's so true, so now that winter is over, I've cut back on my carbs (not eliminated, don't worry!) and really make my calories count.

In this dish, instead of using pasta, I swapped it with zucchini noodles. My Paderno Spiral Vegetable Slicer is my FAVORITE cooking unit at all times. It's the easiest way to make zucchini noodles, sweet potato spirals, carrot ribbons and more! Before I own one, I used my mandolin, but it is so much faster and easier (and safer) with this fun gadget – you need one !!

Spicy shrimp with garlic, zucchini noodles (zoodles), tomatoes and a squeeze of lemon – I just inhaled this LIGHT carbohydrate, gluten-free, paleo-friendly lunch that took less than 20 minutes to make, start to finish and it was delicious!

  • 1 1/2 tsp olive oil
  • knife crushed red pepper flakes
  • 4 oz peeled and developed shrimp
  • 2 cloves of garlic, cut thin and divided
  • 1 medium, 7 oz zucchini, spiralized
  • knife salt and fresh black pepper
  • 1/4 lemon
  • 1/4 cup halved grape tomatoes
  • Heat a medium nonstick skillet over medium-high heat.

  • Add 1 teaspoon of oil and crush red pepper flakes, add shrimp and season with knife salt and pepper; cook 2 to 3 minutes.

  • Add half the garlic and continue to cook for a minute more, or until the shrimp is cooked through and opaque.

  • Set it aside on a bowl.

  • Add the remaining 1/2 teaspoon oil and garlic to the pan, cook 30 seconds, then add the zucchini noodles and cook 1 1/2 minutes.

  • Add shrimp and tomatoes to the pan and squeeze the lemon over the bowl.

  • Remove it from the heat and serve.

Serving: 1zucchini + shrimp, calories: 235.5 kcal, carbohydrates: 14.5 g, protein: 25 g, fat: 9 g, saturated fat: 1 g, cholesterol: 173 mg, sodium: 179 mg, fiber: 4g, sugar: 4g
