Wild rice, walnut and apricot salad

Ingredients

  • 100 g wild rice mix
  • 75 g of white rice
  • 75 g basmati rice
  • 3/4 cup chopped fresh chives
  • 2 tablespoons of parsley
  • 1/2 cup chopped dried apricots
  • 100 g of chopped walnuts

Bandage

  • 2 tablespoons of peanut oil
  • 2 tablespoons of olive oil
  • 1/4 cup white vinegar
  • 1/2 lemon juice
  • 1 teaspoon of brown sugar
  • 1 teaspoon of mustard
  • 1 pinch of salt and pepper

Method

  1. Cook the rice in separate containers of boiling water until done. Drain and let cool.

  2. Combine the rice in a salad bowl and add chives, parsley, apricots, and walnuts. Mix well.

  3. Dressing: Combine oils, vinegar, lemon, sugar, and mustard in a jar. Shake well.

  4. Pour dressing over salad and stir to coat.

  5. Spice with salt and pepper.

  6. Serve at room temperature.
