Ingredients
  • 2 1/4 cups

    multipurpose flower

  • 3 tablespoons

    baking powder

  • 3 tsp

    sugar

  • 1 tsp

    kosher salt

  • two

    egg yolks

  • two

    egg whites

  • 2 1/2 cups

    buttermilk

  • 3 tsp

    vanilla extract

  • 1/4 cup

    vegetable or canola oil

  • maple syrup, to serve

  1. Combine flour, sugar, baking powder, and salt.

  2. Separate the yolks in a large bowl and the whites in a smaller bowl. Add your buttermilk, vanilla, and oil to the egg yolks and beat until combined. Beat the egg whites until foamy, then set aside.

  3. Pour the wet ingredients into the dry ingredients, beat until combined. Fold the frothy egg whites into the batter. Pour 1/3 cup dough at a time onto a hot, greased griddle (usually over medium-high heat at first, then reduce to medium).

  4. Cook pancakes until bubbly on one side, then flip and cook until fluffy and firm, about 2 minutes. Sprinkle the maple syrup on a large stack of pancakes and enjoy!
