- 12 Crushed Weet-Bix
- 1/4 cup sifted cocoa powder
- 3/4 cup brown sugar
- 200 g of melted butter
- 1/2 cup dried coconut
- 1 lightly beaten egg
- 200 g of melted milk chocolate
- 200 g chocolate freckles
Preheat oven to 180C / 160C degrees forced by fan.
Grease a 18 cm x 28 cm mold. Line up the base and sides with parchment paper, leaving a 3 cm overhang on all sides.
Combine finely crushed Weet-Bix, cocoa powder, sugar, butter, coconut, and egg in a bowl.
Press the mixture onto the base of the prepared pan.
Bake 15 to 20 minutes or until firm to the touch. Let cool.
Melt the chocolate over medium heat in the microwave for 3 minutes (stirring every 30 seconds with a metal spoon) and pour over the top of the slice. Working quickly, place the freckles on neat lines.
Pop in the fridge for 2 hours. Take out of the fridge and cut into squares.
