Several light chicken recipes I love are grilled Bourbon Chicken, roasted chicken with rosemary and lemon and chicken zucchini stir.

When Karina, my oldest daughter (and the prettiest of the two) was younger, and I made something spicy I knew she wouldn't eat, I used to quickly whip this dish. No fan, just ingredients I always had on hand.

Funny because when she first went to college, I never came back again. Recently I ask her which of my recipes she likes the most, this one is on her list of top 10. Given how much she likes it and how quick and easy it is to make, I figured I should share it with you all here. I've always served it to her over rice with avocado, but you can serve it over farro, quinoa or any cereal you prefer. I also took the leftovers and shredded them in my blender for amazing shredded chicken for use in fajitas and quesadillas.

Weeknight Skillet Sazon Chicken Tenders is a simple, quick and easy, kid-friendly chicken recipe – ready in under 15 minutes!

  • 8 1.25 pounds of chicken tenders
  • 1 1/2 teaspoon dry seasoning spices, use my homemade seasoning
  • kosher salt, to taste
  • 2 tsp olive oil, split
  • 1/2 cup diced onion
  • 3 cloves of garlic, crushed
  • 1 medium tomato, cubes
  • 1/3 cup reduced sodium chicken broth, check your labels for a full 30 in compliance and gluten free
  • Season chicken with dry seasoning seasoning and salt.

  • Heat 1 teaspoon of oil in a large nonstick skillet over medium-high heat and add chicken, cook 4 minutes, turning and cook 3 to 4 minutes until golden brown. Set it aside on a bowl.

  • Add the remaining teaspoon of oil and scallions and cook over medium heat for 2 to 3 minutes.

  • Add the garlic and cook for 1 minute. Add tomato, season with salt and cook 3 to 4 minutes until soft and thickened.

  • Add broth, mix and return the chicken; cover, and simmer 1 to 2 minutes to loosen the sauce.
