Is it a salad or a dessert salad? Is either! Watergate salad breaks all the rules. It's a madly delicious mix of pistachio pudding, Cool Whip, pineapple, and marshmallows. The Watergate salad is a retro dessert that is fun and tasty.

Most of the people grew up with Watergate salad or don't know what the tarnation is. If you grew up in the south, you probably had a grandmother who did it for every special occasion or church lunch. The Watergate Salad was originally developed by Kraft under the name Pineapple Pistachio Delight in 1975 when pistachio pudding was first introduced.
The pistachio pudding gives it its characteristic mint green color and a good part of its flavor. It is affectionately known as "Green Stuff" to many people.
If you've never had a Watergate salad, get ready. It has a wild and crazy texture with tons of contrasts. The cold whip makes it a bit light and airy, but there are little chunks of pineapple and a crunch of the nuts, giving the teeth something to sink into. And of course, marshmallows really stand out with their smooth but slightly chewy texture. Once your senses overcome the madness of everything, you will discover that it is really delicious.

2 cans (8 ounces) pineapple, crushed in juice, undrained
1 package (3.4 ounces) pistachio instant pudding
1 tub (8 ounces) frozen whipped topping, thawed
1 cup miniature marshmallows
1/2 cup toasted walnuts, chopped
In a medium bowl, mix the entire contents of the pineapple cans and the pudding mixture until smooth.
Fold the whipped topping and the marshmallows. Cover and refrigerate for at least 1 hour.
Sprinkle nuts on top before serving.
