- 200 grams of tofu
- 1 bunch of spinach
- 1 bunch of Swiss chard
- 2 cloves of garlic
- ½ carrot
- 1 onion
- 1 piece of white cabbage
- 1 piece of ginger (small)
- 1 pinch of salt
- 1 pinch of pepper
- 2 tablespoons of oil
Steps to follow to make this recipe: 1
Cut the onion and cabbage into julienne strips, mince the garlic and ginger. Also cut the chard leaves into strips. Break the tofu block into small pieces with your hands or crush it with your fork.
Heat a frying pan with oil and sauté the onion, garlic and ginger. When the onion begins to become transparent, add the cabbage and carrot and cook the vegetables for the vegan tofu scramble for 2-3 minutes. Then add the spinach and Swiss chard leaves and cook 1 minute more.
Add the tofu, salt and pepper to the pan and cook everything stirring occasionally for 5-7 minutes.
Serve the scrambled eggs of tofu with vegetables with toast, salad or more vegetables.
