This recipe is vegetarian and vegan friendly. YUMMY in every way. Perfect for special occasions, celebrations or just because.

Here's how to do it

  • Make the masa and set it aside until ready to use.
  • Soak corn husks in warm water.

Here is a homemade masa for tamales recipe that is good for either sweet and tasty.

Not a shortener or blubber fan? Try to make vegan masa with oil.

Words to the wise: These are two steps you can do ahead of time.

  • Softened corn shells overnight. Though all they really need is 30 minutes in really hot water to get pliable.
  • OR buy already prepared masa. For beginners, store-bought masa highly recommended.

  • Spread a thin layer of masa on the corn husk.
  • Avoid the upper corner area.

You don't want to add too much masa, otherwise they do not cook properly. Who only wants to bite corn dough. It's all about stuffing!

Size matters!

The bigger the shell, the bigger the tamal. Small corn shells produce tiny vegetarian tamales.

  • Add the filling to the center of the masa.
  • Use your best judgment on how to add.

These are peas, carrots, and potatoes making vegan tamales. Feel free to add whatever your heart and taste buds want.

How to fold

  • Insert the sides of corn husks.
  • Fold over the pointed top to the center of the shell.

While gathering, remember to do so stand them upright. Laying them flat will cause vegetable fillings to fall out.

Some people will tie a string from the shell around tamales. This is completely optional.

If you see that it is not stable, try tying the string to keep it in place.

  • Add water to the bottom of a steamer.

No steamboat? No problem?

How can I steam without a steamer? Make large balls of aluminum foil the size of golf balls. Add the water. Place a heat-resistant plate over the balls.

From here, the uncooked tamales are gathered across the plate.

  • Collect the raw tamales in the steamer.
  • Open side must face up.
  • Steam for 1 ½ hour.

Check halfway for water. Carefully add more if needed.

After 90 minutes, remove one of the vegetarian tamales. When masa is easily pulled away from the shell, that's when they're ready. If not, cook for another 30 minutes.

Turn off the heat and allow to sit inside the pan for another 30 minutes before serving.

Make them faster!

Traditionally, they are cooked in a large steaming pot. However, Instant pot pork Tamales or Instant pot chicken Tamales take half the cooking time.

Equipment

  • Steamer

ingredients

For Masa:

  • 2/3 cup abbreviation
  • 2 cups of masa harina (for tamales)
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 1/3 cups hot water (or vegetable broth)

To fill:

  • 1/4 cup canned peas drained
  • 1/4 cup canned carrots drained
  • 1/4 cup canned corn kernels drained
  • 1/2 cup potatoes (cubes and cooked)

Also need:

  • 10 cups of water divided
  • 1 pack of corn shells

Instructions

For Masa:

  • Whip the cut until smooth with a Kitchen Aid or hand mixer.
  • Mix masa harina, salt and baking powder.
  • Slowly add the masa harina mixture to the shortening.
  • Add little by little as you mix it with the mixer.
  • Slowly add some of the hot water.
  • Do this little by little until it is fully integrated.
  • Except until it is ready for use.

For maize shells:

  • Cover corn shells in warm water.
  • Place a large object over the shells so that they are completely submerged in water.
  • This will take approx. 30 minutes, or until flexible.
  • The night over is best.

To collect Tamales:

  • Shake some excess water on corn husks.
  • Spread a thin layer of masa on the corn husk, avoiding the corner top.
  • For the filling to the center of the masa. About 1 tbsp.
  • Use your best judgment of how much filling to add.
  • Fold in the pages.
  • Fold the corner top to the middle of the tamal.
  • Place the tamal vertically with the open side facing up as you gather the rest of the tamales.

How to cook Tamales:

  • Add 2 cups of water to a steamer.
  • Add all the uncooked tamales into the steamer with the open side facing up.
  • Place unused corn shells on top of the steamer.
  • Cover the pot with a lid.
  • Cook on medium low heat for 90 minutes.
  • Take out a tamal.
  • Open it.
  • If tamal masa is easily pulled away from the shell, tamales are ready.
  • If not, cook for another 30 minutes.
  • Leave the tamales in the steamer for an additional 30 minutes before serving.

  • Place the metal box for Instant Pot.
  • Add 1 cup of water.
  • Arrange as many tamales as you can open upwards.
  • Close the lid.
  • Move valve to seal.
  • Press Press Cook.
  • For Frozen Tamales: Press the + button for 45 minutes.
  • For fresh Tamales: Press the + button for 35 minutes.
  • Full natural release.
  • If you are not ready, do another pressure cook 5 minutes.
