Vegetable mix "Nachos"

  • 1 avocado, diced
  • 4 medium potatoes
  • 200 g of pumpkin
  • 400 g canned chopped tomato
  • 400 g cannedini canned beans
  • 1 teaspoon of paprika
  • 1 tablespoon of golden syrup
  • 1/2 cup of grated cheese
  • 1/4 cup sour cream
  • 1 tablespoon of olive oil


  1. Preheat the oven to 200C. Peel and cut the potatoes and squash into pieces. Place on baking sheet, drizzle with olive oil and salt to taste and bake in the oven for 35 minutes until tender.

  2. In a medium saucepan, add the tomatoes, paprika, and golden syrup. Heat over medium heat until it boils. Add drained cannellini beans and cook covered 10 minutes.

  3. To assemble: Place the potatoes and pumpkin on a flat plate. Top with tomato and bean mixture, then grated cheese, avocado, and tablespoons of sour cream.
