A traditional dish can also be vegan and this time I bring a recipe from a vegetable meat stew to prove it to RecetasGratis. It is like a traditional meat and potato stew with a rich vegetable sauce. But I have substituted the meat for a vegetable based on soy protein, although you can also use seitan, tempeh or even tofu. - 12 small potatoes
- 400 grams of seitan or soy vegetable meat
- 1 onion
- 2 carrots
- 3 garlic cloves
- 1 red pepper
- 4 tablespoons tomato sauce
- 2 tablespoons of wheat flour
- 1 small glass of white wine
- 2 cups vegetable stock or water
- 1 teaspoon salt
- 1 pinch of pepper
- 1 teaspoon of smoked paprika
- 2 tablespoons of olive oil
Steps to follow to make this recipe: 1
Chop the onion, garlic, carrot and bell pepper in Little pieces.
Heat a pot with oil and sauté the vegetables for several minutes. Add the salt, pepper, paprika and cook for several more minutes.
Incorporate the wine, the tomato sauce and cover everything with broth or water. Cook the vegetable for 5 more minutes and when it is ready crush everything in the blender until obtaining a homogeneous sauce.
Separately peel and cook the potatoes in salted water for 10 minutes.
Cut the vegetable or seitan meat into pieces, season with salt and pepper, roll with flour and fry in a hot pot with oil until lightly browned. Pour it into the vegetable sauce that we had prepared, cover the pot and cook the vegetable meat stew for 20 minutes over low heat.
Five minutes before the end of cooking, put the potatoes in the pot.
Serves the vegetable meat stew with a few slices of whole wheat bread for dipping.
