Today I decided to do something with everything I already had in the fridge and this is how this recipe for vegetable bean soup.

- 1 cup cooked black beans
- 1 cup Swiss chard
- 2 zucchini
- 1 piece of onion
- 1 clove garlic
- 1 piece of ginger
- 1 green chili
- 2 tomatoes
- 1 cup of mushroom
- 1 pinch of salt
Steps to follow to make this recipe: 1
We start with boil the tomato and the onion along with the green chili, to later be able to peel them and remove the peel.
After removing the skin, we blend all this with water and reserve. The result should be a light broth.
On the other hand, we make a base sofrito with garlic, onion and ginger, all finely chopped. Sauté with a few drops of oil over medium heat.
Remember to use very little ginger or a pinch of ginger powder, because its flavor is very strong.
When the onion starts to look transparent, we incorporate the zucchini chopped into the pan. We remove and keep cooking.
We will pour all the broth along with the chard and stir well.
To finish, add the chopped mushrooms along with the beans. Season to taste and let it all heat up together.
Serve the bean soup with vegetables and decorate the plate with a little coriander, lemon and avocado, you can also add cheese if you like. Bon Appetite!
