Shepherd's pie also known as Shepherd's pie is a traditional dish of British cuisine. It consists of a layer of ground lamb meat coated with mashed potatoes. There are other variations with beef, fish and also a vegetarian version in which you can use legumes and soy protein meat called Shepherdess pie. In our recipe vegan shepherd's cake we will use the textured soy protein and white beans, in addition to vegetables to enrich the flavor. We will prepare a homemade mashed potato to cover the stew and optionally you can cover the mash with cheese to serve a 10 vegan meatloaf.

- 1 onion
- 2 cloves of garlic
- 1 carrot
- 1 handful of green beans
- 2 tomatoes
- 1 tablespoon of oil
- 1 teaspoon salt
- ½ red pepper
- 1 teaspoonful of ginger powder
- ½ teaspoon of cumin powder
- 1 cup cooked white beans
- ½ cup textured soy
- 2 tablespoons of sugar
- 1 cup of crushed tomato
- 1 pinch of paprika from La Vera
- For the mash:
- 5 cooked potatoes
- 1 squirt of oat milk
- ½ teaspoon of salt
- 1 pinch of pepper
- 2 tablespoons of vegetable margarine
Steps to follow to make this recipe: 1
Chop the onion and garlic, chop the green beans, cut the tomato, pepper and carrot into cubes.
Heat a frying pan with oil and sauté the onion and garlic.
Next, add the carrot, green beans, bell pepper and tomato, salt, pepper and cook until the vegetables for the vegan meatloaf go soft.
Meanwhile, soak the textured soybeans in lukewarm water for 15 minutes. After this time, drain it with your hands well squeezing to remove all the water and reserve.
Once the vegan sheperd's pie stir fry is done, add the cooked white beans and the soaked textured soy protein to the pan. Stir well to integrate the ingredients and add the crushed tomato, sugar, cumin and powdered ginger and smoked paprika. Cook about 10-15 minutes until the tomato is reduced a little.
While preparing the mashed potato. Peel the cooked potatoes and cut them into pieces. Place the potatoes in a bowl, add a splash of oat milk, margarine, salt and pepper and mash with a finger peel or a fork until there is a homogeneous mash.
Trick: If the puree is running dry, add a little more oat milk.
In a baking dish place all the bean and soy stew and top it with the mashed potato. Optionally sprinkle some grated cheese on top of the vegan vegetable pie.
Pre-heat the oven at 180 ºC and bake the vegetable pie for vegetarians and vegans for 30 minutes.
Serves the vegan shepherd's cake garnished with sauteed or boiled vegetables.
