- 1½ cups of wheat gluten
- 1 cup cooked chickpeas
- 1 cup of vegetable broth
- 3 garlic cloves
- 2 carrots
- 1 jet of soy sauce
- For the sauce:
- 1 onion
- 2 cloves of garlic
- 2 carrots
- 1 tablespoon of oil
- 1 cup of crushed tomato
- ½ cup of water (120 milliliters)
- 1 teaspoon salt
- 5 basil leaves
- 2 bay leaves
- ½ glass of wine

Peel and chop onion, garlic, and carrot.
Put the vegetables in the mixer and chop them into very small pieces. Reserve the vegetables.
Enter the chickpeas in the mixer and grind them too.
In a bowl mix the crushed chickpeas and vegetables, add the wheat gluten, the vegetable broth and the soy sauce. Mix until you obtain a homogeneous elastic mass.
Shape balls with your hands, roll them in wheat flour and fry the vegan seitan dumplings in a pan with hot oil.
Prepare the sauce of the seitan meatballs, finely chopping the onion, garlic and carrot. Heat a frying pan with oil and prepare a sauce with the vegetables.
Add the chopped basil, the crushed tomato, the salt, the bay leaves, the wine and the water to the pan with the sauce. Stir well and cook until it starts to boil. Keep boiling over medium heat stirring occasionally. When the sauce reduces and thickens, remove the bay leaves, pour the sauce into the blender and blend until smooth.
Pour the crushed sauce back to the pan. Heat it and add the vegan seitan meatballs.
Serve the seitan meatballs in sauce accompanied by vegetables, potatoes, rice or pasta.
