- ½ cup quinoa
- 1 small carrot, grated
- ½ zucchini cut into slices
- ½ chopped onion
- 3 garlic cloves, crushed
- ½ cup chopped mushrooms
- 2 tablespoons of olive oil
- 1 pinch of black pepper
- 1 pinch of salt
- Sunflower seeds
- Poppy seeds
- Other seeds (optional)
- 1 cup of water (240 milliliters)

Cooking quinoa to get started. Wash it very well with warm water and place it in a saucepan.
Add 1 cup of water and a pinch of salt and let the quinoa cook during 15 minutes, or until the beans are soft. Then drain and reserve.
Trick: How to cook quinoa? In the same way as rice but in this case, the ratio is 1 cup of quinoa to 2 of water.
Meanwhile, place the olive oil in a pan and sauté the onion and garlic over medium-low heat. Once the onion is soft, add the carrot and zucchini and mix everything well.
Once the pumpkin is smooth, add the mushrooms and cook another 2-3 minutes, stirring occasionally. Season with salt and pepper to taste, and finally add the cooked quinoa and mix all the original vegan salad.
Trick: If it is a little dry you can add a little more olive oil.
Serve the quinoa and vegetable salad by sprinkling the various seeds on top. Keep in mind that you can eat this vegan quinoa salad both hot, warm and cold, so it doesn't matter if you prepare it in advance or on the spot.
