The recipe is, give or take, a 1: 1 ratio of your favorite canned fruit and canned plain or low coconut milk. It's super easy to make this … but first the ingredients need to be frozen. Open cans or jars and pour the fruit into small, plastic-freezer baths, or use an ice cube tray to freeze the fruit in smaller, easier-to-mix chunks.   • 1 cup of frozen fruit varieties
  • 1 cup frozen coconut milk cubes
  • 3 tablespoons sugar or to taste
  • 1/4 to 1/2 cup of plant-based milk or water
  1. Put canned or preserved fruit (or fresh, if available) and juice / syrup in a freezer-safe container. Freeze overnight or until frozen solid.

  2. Shake a can of plain or low coconut milk until the contents are well mixed. Open the can and stir to finish the mixture. Pour coconut milk into ice-cold trays. Freeze overnight or until frozen solid.

  3. To make the ice cream, place every second serving a cup of fruit and a cup of coconut milk chunks in a high-speed blender, along with the desired amount of sugar (or maple syrup or stevia).

  4. Leek until smooth and creamy, but still stiff enough to serve in a bowl.

  5. If a firmer, more traditional ice consistency is desired, place the blended ice in the freezer for 15-25 minutes.

  6. Decorate with your choice of toppings if desired. Chopped nuts or peanuts, coconut flakes, minced fresh fruit or berries, mint leaves, etc.
