- 1 carrot
- ½ onion
- 180 grams of quinoa
- 1 tomato
- 50 grams of green beans
- 80 grams of green asparagus
- 2 cups of vegetable broth
- 1 pinch of salt
- 1 pinch of ground black pepper

We gather all the ingredients to prepare the quinoa paella with vegetables.
To start, we make a sofrito with the chives and the red pepper cut into small squares. Let cook 4 minutes over medium heat. Meanwhile, cut the green beans into pieces of about 3 centimeters and boil them in water for 5 minutes. After this time, we drain and reserve.
We add the carrot peeled and cut the same size as the pepper, and the asparagus also in pieces. Season with salt and pepper and cook another 5 minutes.
We incorporate the green beans and the quinoa washed, and mix well so that they are integrated in the sofrito.
It is time to incorporate the vegetable broth into our vegetarian paella. We put twice as much broth as quinoa and let cook over low heat for 20 minutes.
Trick: If you see that the paella runs out of liquid you can add more vegetable broth or water.
