The vegetable meat It is a healthy and cholesterol-free option prepared with ingredients of plant origin, perfect to replace animal proteins in your diet. East vegan meat roll It is ideal for any special celebration or just for your healthy lunches and dinners. To create a homogeneous texture, identical to that of a meat roll, we are going to use several ingredients: textured soybeans, sweet potatoes and millet, ingredients rich in vegetable protein, vitamins, minerals and fiber. We are going to glaze the vegan meat with a sweet orange glaze and we are going to serve it with roasted vegetables (like the ones in my recipe for baked potatoes and sweet potatoes in my profile of Free Recipes). You can also serve the vegan meat with rice, pasta, salad or prepare delicious sandwiches and sandwiches.

- 4 white sweet potatoes
- 1 cup cooked millet
- 1 teaspoon chicken seasoning
- 1 pinch of pepper
- 1 teaspoon of cumin
- 1 teaspoon salt
- 1 jet of soy sauce
- 1 cup of vegetable broth
- 1 cup textured soy
- 1 tablespoon cornstarch (optional)
- 1 yuba leaf or tofu skin (optional)
- For the frosting:
- 2 tablespoons sweet mustard
- 2 tablespoons soy sauce
- 2 tablespoons of agave syrup
- 2 tablespoons of orange marmalade
Steps to follow to make this recipe: 1
The first step is cook the sweet potatoes. You can bake them wrapped in aluminum foil about 30-40 minutes at 180 ºC or cook them in boiling water until soft. Check with the toothpick if they are cooked. Next, peel the sweet potatoes and mash them with a finger peel.
Cook the millet in boiling water until soft for about 20 minutes, previously washed thoroughly under running water.
Put soak soy textured in a large bowl with the warm vegetable stock with the soy sauce for 20 minutes.
After the soaking time, add the other ingredients to the bowl: the mashed sweet potato, the millet, the chicken seasoning, the cumin, the salt and the pepper. Mix everything well and pass the mixture to the mixer or a food processor. Shred the dough of the vegetarian meat roll until it is homogeneous, dense and manageable.
Place a large piece of clear plastic film on the counter. On top, place a yuba leaf or tofu skin, previously soaked, to create the skin of our meat roll. Place the dough along one of the yuba edges leaving the lateral ends free. Fold the side ends in and roll up, giving it an oval shape, with the help of the transparent film. To seal the edge, dilute the cornstarch in a little water, paint the edge with a brush, and squeeze well with your hands to seal it.
Wrap the vegan meat roll in several layers of clear film. Heat a pot with water, bring it to a boil and cook it in boiling water for half an hour.
Meanwhile, mix all the ingredients for the frosting orange in a bowl.
Preheat the oven to 180 ºC. Unwrap the roll of vegetable meat after cooking and place it on a baking sheet covered in parchment paper. Brush the roll with the frosting orange that you had prepared on top and bake for 20-25 minutes. Halfway through cooking, repaint the roll with the remaining frosting.
Cut the vegan meat roll sliced and serve with baked vegetables, rice, salad, pasta, etc. Or use it for sandwiches and sandwiches.
