Did someone say summer? We are in the middle of July and this year, summer is more like autumn. Rains. Cold. Temperatures in the 20 degrees centigrade. It is a little lousy.

Do you want to have a barbecue? Too bad, here is some rain for you.

Do you want to hike through the mountains? Rain and cold.

There are sunny days here and there, but it's not close to the scorching summer heat wave. Even ice cream and cold watermelon sound a little, well, cold.

So we have had more soups, stews and hot dishes than in the summer. However, the garden is producing like crazy, so we must keep up with the vegetables, and we find them delicious when they are roasted!

So we made these totally awesome and delicious vegan grilled tofu skewers that are also easy to put together! Sliced ​​vegetables – check. Tofu cubed – marked. A bamboo skewer. Hot grill – check! Just cut, assemble, grill, and enjoy, preferably with a little barbecue sauce.

These tofu skewers are the perfect choice when you want to try summer, and are favorites for picnics and barbecues, loved by vegans and omnivores alike 😉

Vegan {Low Carb} Grilled Tofu Skewers

These vegan grilled tofu skewers are super easy to make, ready in just a couple of minutes. Gluten free and low in carbohydrates!

Ingredients

  • 1 block of tofu (approximately 180 grams; we chose the Mediteran flavor from I Like Tofu)
  • 2 small zucchini
  • 1 red pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 2 cups cherry tomatoes
  • salt pepper
  • 2 tablespoons soy sauce
  • 3 tablespoons of barbecue sauce
  • 2 tablespoons of sesame seeds

Instructions

  1. Press tofu to extract liquid, for about half an hour. Then cut the tofu into cubes and marinade in soy sauce
  2. Prepare the vegetables: cut the zucchini, cut the bell peppers and red onions into squares. Make sure each ingredient is cut to approximately the same size.
  3. Assemble the skewers: glue the vegetables and tofu alternately on bamboo sticks until you have exhausted all your vegetables.
  4. Heat a skillet, grill the pan or grill until hot, grease with a little olive oil, and then place the skewers and cook for a couple of minutes on each side, until the vegetables soften, but not soft and the peppers start to burn. The tofu should be golden. Season with salt and pepper right at the end of cooking, then spread with barbecue sauce and sprinkle with sesame seeds.
  5. Remove from the pan or grill and serve hot.
