Fideuá is a dish that is made in a very similar way to paella, but its main ingredient is noodles. Traditionally, fish stock, fish and shellfish are used as other ingredients, but I have prepared this recipe for vegan fideua with lots of vegetables and vegetable broth that add all the flavor to the dish. I have also added vegetable meat that simulates fish and whose recipe you can find in my Free Recipes profile, but you can add seitan or tofu if you prefer.

- 400 grams of fideuá noodles
- 1½ liters of vegetable broth
- 1 onion
- 2 artichokes
- 1 bell pepper
- ½ cup peas
- ½ zucchini
- ½ aubergine
- 2 carrots
- 2 tomatoes
- 4 cloves of garlic
- 1 tablespoon of sweet paprika
- 1 teaspoon of turmeric
- 150 grams of vegetable meat, seitan or tofu
- 2 tablespoons of olive oil
- 1 teaspoon salt
Steps to follow to make this recipe: 1
In a large paella pan or frying pan, heat the oil and sauté chopped onion and garlic until the onion starts to become transparent.
Add the carrot and pepper cut into small pieces and the artichoke cut into quarters. Cook the vegetables stirring occasionally for a few minutes and add the peas, the eggplant and the zucchini cut into small pieces, stir and cook for several more minutes.
Then add the cut tomatoes diced and vegetable or seitan meat and cook one more minute.
Add the noodles to the paella pan or frying pan and sauté for 2 minutes, stirring. Add the vegetable stock and spices, cover the pan and cook the vegetarian fideuá another 10 minutes.
Turn off the heat and let the vegetable fideuá rest with the lid on for 20 minutes. Sprinkle a little paprika on top and serve the vegan fideua Recently made.
