Vegan Cookie Fries are easy to make, absolutely delicious, and these are also gluten-free! They've gotten even better with mini chocolate chips!
Cookie Fries are crispy, shortbread-like long cookies that are firm and crunchy enough to use them in dipping sauces like fruit sauce or chocolate syrup.
They are a special kind of thing famously available at Disney, but also from a few other places like THIS for $ 55 a pound!
So they are hard to find in the normal version so I suspected they would not be in a vegan and gluten free version. And I was right. So I made my own and they are delicious! Here's how you do it!
How to make vegan cookie fries
This is a small-ish batch. I doubled it and used two 8 ″ x8 ″ pans because I had kids to share with. This recipe can easily be doubled by simply doubling the ingredients.
Step 1: Lubricate and pap the pan
We don't want these to stick, and we also want to be able to cut them without scratching the heck out of our brows. Then we both grease the bottom, then add a layer of parchment paper and then grease the parchment paper. This is a great idea for most baked items if you want them to come out of the pan nice and easy.
Use your favorite vegan butter, greasy bottom of an 8 ″ x8 ″ baking pan.
Cut a sheet of parchment paper to fit just the bottom of the pan and place it on top of the butter.
Then grease the parchment paper too. Set the pan aside.
Add your gluten-free flours in a medium mixing bowl. I used a mixture of potato flour, tapioca starch, rice flour and corn starch. But use what you have on hand. This can also be made with plain flour. Just use the same amount of flour and cut out flax and xanthan gum.
Gluten-free flour each has different properties, which is what makes GF baking so interesting, challenging and frustrating! I chose these because I wanted a light cookie that would also hang together.
Grinded flaxseed and xanthan gum help to keep this together.
Then whisk together butter, apple sauce and water.
Mix the dry ingredients just until well blended. I used a stand mixer. As you can see, I used the attachment for the whisk because I can't find a paddle. Use what you have or even mix it with a wooden spoon.
Sometimes I do it just because it's fun and not just because I've lost my kitchen utensils.
Mix the mini chocolate chips in. I used Enjoy Life Mini Chocolate Chips. I like that brand because I know they are vegan and GF without having to look for ingredients.
Spread evenly at the bottom of the greased and papered baking pan.
Use a piece of plastic wrap to cover the dough and just spread it out with your hands.
It's easy and mess-free! Spread the cookie-fries dough as evenly as possible to allow even cutting.
I don’t have a waffle-edged knife or knife (or maybe I do, but it hides with the shovel blade for the mixer), so I used a regular knife. Which made these look like a "steak fries" version of cookies. Having a waffle-edged knife can make these look like crinkle-cut fries, which are kind of cool. If not, don't worry about it.
Then bake at 325 degrees F for 30 minutes.
When the cookies have baked one cool for a few minutes, they are cut again in the same way. This is where having the parchment at the bottom helps prevent scraping the pan.
Place on a rack to cool for about half an hour.
Allow cookie-fries to cool completely before dipping in sauces.
Boysenberry sauce was the favorite here, but strawberry sauce or syrup, chocolate syrup, any fruit sauce or syrup, etc., would be delicious.
That is it. So simple! Kids love these and they are crispy, like shortbread or biscotti, and therefore make a nice adult buffet with a cup of tea.

Vegan Cookie Fries Gluten Free Recipe
Vegan Cookie Fries are easy to make, delicious, and these are also gluten free! They are even better with chocolate chips! Deep fruit or chocolate sauce!
Total time 1 hour 20 minutes
- 1/2 cup rice flour
- 1/2 cup potato flour
- 1/2 cup of tapioca starch
- 1/2 cup cornstarch
- 2 tablespoons of ground flaxseed
- 1 teaspoon of xanthan gum
- 3/4 teaspoon salt
- 1/2 cup of vegan butter like Earth Balance
- 1/4 cup apple sauce
- 1/4 cup of water
- 1/2 cup powdered sugar
- Fruit or chocolate sauce or syrup
Preheat oven to 325 degrees F.
Grease the bottom of an 8 "x 8" baking pan. Then cut a piece of parchment paper than fit just inside the pan, and place it in the pan over the butter. Also rub some butter over the parchment paper. Set aside.
Stir the dry ingredients together in a medium bowl.
In another large mixing bowl, mix the wet ingredients together until well integrated.
Mix the dry ingredients into the wet ingredients using a hand mixer, stand mixer or a spoon if you work by hand. Mix well until the ingredients are well integrated and the dough adheres well.
Pour the dough into the bottom of the greased and papered pan. Spread evenly. Cover in a sheet of plastic wrap and press until dough is firm and firm.
Using a straight or curled edge knife, cut 18-ounce fries into the dough and press down to the bottom of the pan.
Bake at 325 degrees F for 30 minutes.
Remove from oven and allow to cool for a few minutes. Reinsert french fries. Then remove cookie-fries from the pan and place them on a refrigerator. Allow cookies to cool completely, which takes approx. 30 minutes.
Serve with any fruit or chocolate sauce for dipping or enjoy plain with a cup of tea!
GF flour substitutes: If you do not have the specific GF flour listed here, simply use 2 cups of your preferred GF flour or flour mixture instead. These are cookies. They will still be delicious.
Regular flour option: Just replace 2 cups with your favorite GF flour.
