The last of the summer days happening here. We've been getting the first hints of a fall, and we don't like it! It seems that the seasons are accelerating, spring came late, summer hastened and now it seems that it is already autumn.

We are picking the last tomato from the garden. Do you also think tomatoes and bread are best friends? Just think of the best foods: bruschetta (bread and tomato), panzanella (bread and tomato) ,.

We combine them to offer you this tasty focaccia that tastes almost like pizza. .

If you don't know, focaccia is a type of oven-baked Italian flatbread, usually made with olive oil, herbs, and spices.

Making focaccia is almost no different than making any other bread, but add a little olive oil to the dough and the ingredients of your choice on top.

Performance: 8 Preparation time: 1 hour 30 minutes Time to cook: 15 minutes Total time: 1 hour 45 minutes

This vegan cherry tomato focaccia is topped with fragrant cherry tomatoes, coarse salt, and pizza herbs.

  • 1 1/3 cups of water
  • 2 teaspoons of sugar
  • 5 grams of dry yeast
  • 3 cups of flour
  • 1/4 cup olive oil
  • 2 teaspoons of salt

  • 10 cherry tomatoes
  • pizza spices
  • coarse salt
  • olive oil

  1. Add sugar and dry yeast to warm water. Mix well to combine, cover the bowl with a kitchen towel and let sit for 10 minutes to activate the yeast. Once the yeast is activated, add it to the flour, then also add olive oil and salt and knead until you obtain a soft and elastic dough.
  2. Once the dough is kneaded, set it aside in a bowl, cover with a kitchen towel, and let sit for about an hour, or until the dough doubles in size.
  3. Prepare a large round baking tin (28 cm / 11 inches), grease with olive oil and sprinkle with flour to prevent the dough from sticking.
  4. Pour the dough onto your counter and form a ball. Using your hands, roll out the dough to the size of the can and place it in the can. Let stand another 15 minutes.
  5. Preheat oven to 200 ° C / 390 ° F.
  6. Press the cherry tomatoes into the dough and punch holes in the dough with your fingers to create an uneven surface. Sprinkle with pizza spices and coarse salt and drizzle with olive oil.
  7. Place the focaccia in the preheated oven and bake for about 15-20 minutes, until the batter is browned and the cherry tomatoes are bubbling. Remove the focaccia from the oven and allow to cool.

This recipe is presented in collaboration with Serious Blends, unique artisan spice blends. We use their “pizza” spice mix to add a touch of flavor to the recipe, but they have other really good mixes, like “nirvana”, “pink panther” or “lemon garlic” (which is our favorite!).
