The vegan breaded steaks They are a very simple preparation to prepare that you can make and reserve for the moment you feel like it because as you will see in the recipe, we are going to precook these vegan fillets, so you can give them a second cook and use them when you prefer.

- ½ cup fine textured soy
- 2 carrots
- 2 cloves of garlic
- ½ onion
- 3 tablespoons of wheat gluten
- 2 teaspoons of smoked paprika from La Vera
- 1 pinch of pepper
- 1 teaspoon salt
- 1 cup of vegetable broth
- 1 cup chickpea flour
- ¾ cup of water (180 milliliters)
- ½ cup breadcrumbs
- 1 tablespoon of oil
Steps to follow to make this recipe: 1
Soak the soybean textured in water or warm vegetable broth for 15-20 minutes. Drain the soybeans well by squeezing with your hand to remove excess liquid.
Peel the carrot and cut it into not very large pieces, also cut the onion into medium pieces.
Place the textured soybeans, carrots, onion and garlic in the blender and shred everything until there is a fine and homogeneous mixture.
Transfer the mixture to a bowl and add the wheat gluten, the smoked paprika, pepper, salt and the vegetable broth. Knead with your hands until you get a dense and non-sticky vegetarian fillet dough. Add more wheat gluten if needed.
Separate the dough into equal portions (the amount of the dough will give 2-3 fillets). Place each portion on a piece of aluminum foil and flatten it into a fillet with your hands. Wrap the vegan fillets in the foil and crush them a little more with your hands to fix the shape.
Cook the steaks textured soy beans steamed in the steam cooker or heat a small amount of water in a skillet (water should not cover fillets, better if it reaches half or a little more) and cook for 40 minutes. If you use the second method, remember that you have to wrap the fillets very well so that they do not get wet and that they must be turned after 20 minutes. Unwrap the vegetable fillets, they must have hardened during cooking.
In a bowl mix the chickpea flour with the water and salt and beat the mixture with a fork until obtaining the texture of a beaten egg. Pass the soy fillets first by the mixture and then by the breadcrumbs.
The vegan breaded steaks they are ready to be cooked. You can fry them or cook them in the oven until they turn golden and crispy on the outside.
