- 25 grams of fresh yeast
- 1 teaspoon salt
- 125 grams of sugar

- 100 grams of yellow fondant
- 1 lemon
- 25 grams of white fondant
- 300 grams of icing sugar
- 3 tablespoons of water
- 2 tablespoons of sugar balls
- 2 tablespoons white and pink sprinkles

First of all, let's prepare homemade donuts. For this, we heat the milk so that it is warm and we dissolve the yeast in it, stirring until it dissolves.
We sift the flour along with the salt in a large bowl or in the mixer glass, since in this way the unicorn donuts will be softer and fluffier.
We make a hole in the center and add in it the sugar, milk with yeast and eggs previously lightly beaten. We remove with a spatula in the center and we gradually incorporate the flour from the sides. We can also do it in a mixer with the kneading hook. In this case, it will be necessary, from time to time, to stop and incorporate the remaining flour on the sides with a spatula in order to continue kneading.
The resulting dough will be very sticky. Yes we knead with the hands, we flour a work surface and the hands, we will have to knead and scratch the work table. We will continue to flour our hands but not excessively, because the dough will be hard if we go overboard in flour. If we use the mixer and we see it very soft, add one more tablespoon of flour, and continue kneading until the dough is peeling off the walls a little.
When the dough is a little bit more manageable, gradually add the chopped butter and we continue to knead. The process is a bit long, but you have to be patient if you want to get perfect unicorn donuts. We will be flouring our hands, but without excess. If we use the mixer, we will see that the dough is ready when it comes off the walls but it is still stuck to the bottom of the bowl and still sticky to the touch.
We form a ball with the dough, cover it with a damp cloth and we let it rest 2 hours or until it has doubled in volume.
After this time, we floured a work surface again, we roll out the dough with a rolling pin previously floured and leave it about a centimeter thick. With a round cookie cutter (mine 6 cm in diameter) we cut the circles to start forming the donuts. We knead the remaining dough again and cut circles with it until it is completely spent.
With another smaller cutter (mine 2.5 cm in diameter), stopper, nozzle …, we cut the center of the circle to make the hole for the donuts.
It is a good idea, although not essential, to have prepared some pieces of cut oven paper to put a donut on top of each piece, since this will facilitate the task of frying later. Thus, we put all the donuts on the papers, which will be in trays and separated from each other. Then, we cover them with a cloth and let them rest one hour. The donuts have to grow a little, but not excessively or they would lose their shape.
We put abundant sunflower oil in a saucepan and heat it well. We lower the heat to medium-low and go introducing the donuts with the included paper. A few seconds later, we can remove the paper with kitchen tongs without problems.
If you see that the hole closes while the donuts are fried, you can turn it over with a long skewer stick. We cook for a few seconds on one side and then on the other. We must leave them slightly golden, but not in excess.
We are removing the donuts with tweezers and we are leaving them on a plate with kitchen paper to absorb excess oil. The best is freeze the donuts once cold, especially if they are not going to be decorated immediately, as they are delicious the same day they are made, but the next day they lose freshness.
Now, let's go with the decoration to make some unicorn donuts. First we are going to make unicorn horns. Ideally, do it a few days before so that the fondant dries well. I did it two days before.
- We make an elongated and fine churrito with a piece of yellow fondant about 10 cm long.
- We fold the churrito in half.
- We carefully screw it together.
- We cut the lower end leaving it about 4-5 cm long.
- Pinch the top tip to flatten it and let it dry.
We make as many horns as donuts we want to decorate. I did 12.
Once the horns are done, it is the turn of unicorn ears. For this, we will use the white and yellow fondant, although you can also substitute yellow for another color, such as pink, blue …
- We make a ball with the white fondant and a smaller one with the yellow color.
- We flatten the white ball with the index finger.
- Put the yellow ball on top and press with your finger so that it flattens on top of the white ball, so that it will look like a fried egg.
- Using your thumb and index finger, pinch one side of the fried egg to make a beak.
- With a knife, we cut the other end so that we can glue it to the donuts on that flatter side.
Let them dry, which, by the way, will do it quite quickly, being ready in just one hour.
Now it's up to us make the icing of the unicorn donuts. In a bowl we put the icing sugar, a few drops of lemon and add the water little by little until we see that we have a suitable consistency. I have made it a little thick. We dip each donut in the glaze, bearing in mind that half will be enough.
We are depositing the donuts on a grid so that the glaze is unified. We let them dry for a few minutes and sprinkle the sugar balls and sprinkles, only in one half of the donuts. If you put the decorations on soon, they may move out of place when the frosting drips to the sides, and if you put them on too late, the frosting will have dried and will not stick.
It is very important that we let the frosting dry completely in order to manipulate the donuts again. For this, we can put them in the fridge to speed up the process. Once dry, prick the donuts with a toothpick and we put them on a cork lined with aluminum foil to keep them standing. It is time to put some more decoration on the top. This time, we will glue them with a little leftover icing, and if we have not had it, we can do a little more.
It's time to put horns and ears. For the horn, we make a small hole at the top, enough to fit the entire horn. I have done it with a fine point knife. We dip the horn in the icing, put it in the hole and hold it with our hands for a minute so that it remains fixed with the icing. For the ears there is no need to make a hole, we simply glue them with icing, one on each side of the horn, we also hold them for a minute so that they stay fixed and let them dry completely before handling the unicorn donuts again.
