What ingredients do you need to make a tomato soup?

  • Canned crushed tomatoes: I love to buy the fire roast. It is an instant flavor boost. You can also start with canned whole peeled tomatoes.
  • Vegetable broth: If you have chicken stock and don't want to keep the vegetarian recipe, you can substitute it. The broth adds more flavor than just using water. However, if you have problems, don't hesitate to use water.
  • Onions: Chop a large white onion to really add flavor. I would not recommend using onion powder because fresh onions really make the flavor more pronounced. You do not need to cut it finely, as it will combine everything.
  • Butter: It may seem like a lot to use 3 tablespoons, but this is what makes tomato soup creamy. Feel free to use olive oil or vegan butter to make the vegan recipe.
  • Garlic: Use fresh garlic to add more flavor to the soup. Or you can also use frozen garlic. As with the onion tip, I would not recommend using garlic powder.

How is tomato soup made?

  1. Cook the onions in the butter until softened.. You will notice that some bubbles start to form due to the amount of butter we are using, but that is perfectly normal. Be careful not to brown the onions. Although a little gold is fine.
  2. Add the garlic and cook until fragrant. You only need to cook it for 30 seconds to make sure the garlic doesn't burn.
  3. Add the crushed tomatoes with all the juices from the can.
  4. Then add the vegetable stock and mix everything together
  5. Simmer and then cook uncovered for half an hour. You can cover it if you prefer, but it is not necessary. The flavor will actually be more intense if you don't cover it, as it will become more concentrated with evaporation of some of the liquid.
  6. Use an immersion blender to create a smooth soup. You can also transfer the soup to a blender and mix in batches if necessary. If you don't have a blender, be sure to cut everything finely and leave the soup thick without mashing.

Tips for making tomato soup

  1. Use high quality ingredients. The recipe only uses 5 ingredients, so each of them becomes crucial in providing the best flavor for this tomato soup. That means premium broth, tasty canned tomatoes (my favorite is fire roast!), Fresh onions and garlic, and butter made with minimal ingredients.
  2. Use an immersion blender to mix the soup. This is the easiest way to make it wonderfully smooth. Alternatively, you can put the soup in a batch blender. Just be careful as the tomato soup will be very hot.
  3. Finely chop the ingredients if you are not mixing. Classic tomato soup is generally mixed for a smooth, creamy consistency. But if you don't have an immersion blender or a stand blender, you can certainly keep it thick.
  4. Substitute with fresh tomatoes if desired. Although I would not recommend fresh tomatoes for this recipe, you can use them. Instead of the 28 ounces of crushed tomatoes, use 4 cups of chopped fresh tomatoes. And I definitely recommend mashed if you use fresh tomatoes.

Once you have prepared the soup, allow it to cool to room temperature and transfer it to an airtight container and store it in the refrigerator. It will stay for up to 4 days and can be reheated on the stove or in the microwave.

Can you freeze the soup?

This soup freezes very well and will last up to 3 months. Be sure to leave room at the top of the container as the soup will expand as it freezes. Thaw the soup in the refrigerator overnight or for a couple of hours at room temperature before reheating.

Can I make tomato soup in the instant pot?

If you can. Just add all the ingredients to the pot, but reduce the broth to a cup, since the closed instant pot does not allow any liquid to evaporate. You can experiment with the amount of liquid you use to see what you prefer.

  • 3 tablespoons of butter

  • ½ large onion, chopped

  • 1 garlic clove, sliced

  • 1 28-ounce can crushed tomatoes

  • In a medium saucepan over medium heat, add the butter and onion. Cook until the onions soften, about 5 minutes. Add garlic and sauté until fragrant.
