This vegan tomato basil tofu sandwich is a quick and easy idea for summer!

Hot days ahead! We may have the first small heat wave this year, but unfortunately the summer weather is not expected to last long. Our green leafy vegetables in the garden absolutely enjoy this climate, but our tomatoes not so much and this year we have decided to protect them from constant rain with a DIY tomato “greenhouse”. Tomato and Basil Tofu Sandwich {Vegan}

This vegan tofu sandwich with tomato and basil is a quick and easy idea of ​​a summer snack. Ready in 15 minutes!


  • 180 grams of block pre-cooked tofu (we use I Like Tofu Pesto Basilico)
  • 8 slices of wholemeal sandwich bread
  • 2 tomatoes
  • 8 basil leaves
  • 8 lettuce leaves
  • vegetable butter or cream spread
  • salt, pepper to taste


  1. Wash and dry the basil, lettuce, and tomato leaves. Cut the tomato into slices, if necessary cut the lettuce into smaller sheets.
  2. Cut the tofu into 4 thin slices.
  3. Prepare Your Sandwich: Spread butter or plant-based cream spread on whole wheat sandwich bread. Add basil leaves, lettuce, tofu, and tomato slices. Season with a pinch of salt and pepper to taste. Cover the sandwich with bread.
  4. Cut in half before serving.
