  • 2 cups of flour with yeast
  • 1 pinch of salt
  • 1 cup of water


  1. In a bowl combine the flour and salt that rise automatically, and with a fork, make a well in the center.

  2. Slowly start adding enough water until the mixture separates from the sides of the bowl and combine until the mixture begins to form a dough.

  3. This is the most important step since you don't really want to knead it, you just have to leave it as it is. Using your hands, cup and slowly work the dough into a good round cushion shape.

  4. Place on a foil-lined trivet and sprinkle a little flour on top of the damper. This gives the final damper a nice crisp cover. Cook for about 20 minutes or until the damper sounds hollow when struck.


Do not knead the dough, as it will expel the air and make it dense.
