The BEST quick and easy chili recipe! Made in 30 minutes on the stove, this beef chili is a delicious family dinner to enjoy in the fall. It's made from scratch (no packaging seasoning)!

I created this easy chili recipe the night I started laboring with my fifth baby on Super Bowl Sunday! I didn't expect to be pregnant, so I planned our soccer watching menu. But lo and behold, I'm still snuggling up to my sweet newborn, so I quickly prepared this beef chili recipe before the game started, and it turned out so good.

Since that night, I have done it many times and have adjusted it perfectly. It's a food that I turn to when I'm short on time (because it only takes 30 minutes to make, just like this cashew-fried chicken and this homemade macaroni and cheese), but I still want to feed my family heartily, food! healthy!

We actually call this quick chili recipe "Keilah Chili" since it was born a few hours after we all enjoyed it. 😉 Then it has a special place in my heart!

How is this easy chili recipe made?

This beef chili recipe is very easy to make, and I always have all the ingredients on hand! Let's go through the process step by step, and don't forget to watch the video!

Make the chili seasoning

This easy chili recipe isn't based on packaged condiment mixes! Instead, we make a mix of homemade condiments that can be adjusted according to your own personal preferences! I make ours soft enough (like this slow cooker chicken chili) to feed 5 kids (and myself because I'm a spice weaker)! So feel free to adjust the heat accordingly.

Browning the meat

Once the spice mixture is ready, brown the ground beef with the garlic. Cook over medium-high heat until golden brown for the best texture and flavor.

Drain fat

Depending on the percentage of fat in your ground beef, you may need to drain the fat halfway through cooking!

Add bell peppers and onions

Once the meat is browned (but not completely), add the bell peppers and onions, stir, cover, and cook until smooth.

Add the rest of the ingredients and cook

Then add the rest of the ingredients and stir until everything is combined. Test and adjust the salt, pepper, or spice factor to your preference.

How long should you cook the beef chili?

How do you thicken the chili?

If you like super thick chili, here are some ways to thicken it up really well!

  • Cook the uncovered chili over medium-high heat. This will cause the water to evaporate and naturally thicken the chili!
  • Make a mixture of 1 tablespoon of cold water, 1 tablespoon of flour or cornstarch, add it to the beef chili and cook uncovered.
  • Add some tortilla chips to a food process and process them to make fine crumbs. Add 1-3 tablespoons of tortilla chip crumbs to the chili and cook uncovered!

The best easy chili recipe: ingredients and substitutions

One of the best things about this beef chili is that it is easily customizable! Here are some notes on ingredients and possible substitutions!

  • Ground beef. I like to use lean ground beef (93/7). However, I have also used 85% lean meat. I have also used ground turkey with excellent results!
  • Minced garlic. If you don't have minced garlic by hand, you can substitute garlic powder. Just add it with the rest of the spices.
  • Peppers. Any variety of bell pepper color works well in this recipe! If you want to add a little heat, add some more hot peppers.
  • Spice mix I have written this recipe with the proportions of spices and the combination that we love the most. If you change it, I can't guarantee the results! The only thing I will say is that you can add more chili powder, or some cayenne powder to increase the heat if you want.
  • Fire roasted tomatoes. I love the flavor that fire-roasted tomatoes add to this easy chili (and these sausage gnocchi). You can also substitute regular canned diced tomatoes!
  • Beans. I use a can of beans because my husband is not a fan of beans, so I don't like making our chili too "beans." However, you can add another can (2 cans total) if you like beans. You can also use any type of beans you want! My other favorites are black beans, great white beans (norteños), and chickpeas (garbanzos)!
  • Ketchup. I always have canned tomato sauce on hand (to make homemade pizza sauce). If you want to substitute homemade tomato sauce, go ahead!
  • Corn. Fresh and frozen corn work well in this chili recipe!

Ingredients

  • 1.5 lb ground beef
  • ½ cup diced onion
  • 2 bell peppers diced
  • 2 teaspoons minced garlic or 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • ½ teaspoon coriander
  • 2 tablespoons of paprika
  • 1 ½ tablespoon chili powder
  • 1 teaspoon of granulated sugar
  • ½ teaspoon of sea salt or more to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 (14.5 oz) can shoot roasted tomatoes
  • 1 can (15 oz) beans, drained and rinsed (more to taste)
  • 1 can (15 oz) tomato sauce
  • 1 can (4 ounces) chopped green chilies
  • ½ cup corn

Instructions

  • Combine cumin, coriander, paprika, chili powder, sugar, sea salt, and pepper in a small bowl. Set aside.
  • Add ground beef to a large pot. Cook until meat begins to brown. (You may need to drain excess fat from meat halfway through cooking, depending on the percentage of fat in your meat.)
  • Add onion, bell peppers, and minced garlic to meat.
  • Cook over medium-high heat for 5-10 minutes until meat is browned and vegetables are tender.
  • Add tomatoes, tomato sauce, and chiles and stir until evenly distributed.
  • Add the spice mixture and stir until evenly distributed.
  • Add corn and beans and stir until combined.
  • Cook over medium heat for 15 minutes. After 15 minutes, reduce heat to low until ready to serve.
  • Serve with your favorite chili dishes! Our favorites include: sour cream, green onion, cheddar cheese, and crushed tortilla chips!
