Salmon is our family's favorite protein; in fact, we enjoy it every week on what we call "salmon monday". We have a few dishes to go, but we were delighted to partner with Sam’s Club to create a new salmon recipe. Salmon is Healthy life made simple Magazine of the Month Superfood for March and April and Broccoli is the Superfood for January and February, so we incorporated both!

Teriyaki Salmon Rolls

My husband is the creative mind behind most of the recipes on the blog, and when I told him the two ingredients for our recipe, it only took him about 30 seconds to get rid of the Teriyaki Salmon Rolls idea. Seriously, where does he come up with these things so fast? Genius!

Interestingly, it was me who turned out to be the best sushi maker! So if you are not a genius in the kitchen like me, rest assured you CAN make this recipeAnd it will be beautiful! (And, of course, delicious!) This recipe is perfect for Lent or year-round as a healthy seafood option.

Teriyaki Salmon Hand Roll Sushi Ingredients:

  • 1 pound salmon
  • 1 cup broccoli florets
  • 1 package roasted seaweed sheets (sushi nori) (8 ″ x 7 ″)
  • 2 cups of white rice
  • 1/2 cup soy sauce
  • 5 teaspoons of brown sugar (can replace normal sugar)
  • 1 TB of honey
  • 1 TB of cornstarch
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon ground ginger (powder)
  • 1 1/3 cup water (you can sub pineapple juice for extra sweetness in sauce)

Addresses

For the teriyaki sauce –

Mix 1/4 cup soy sauce, 5 teaspoons brown sugar, 1 TB honey, 1/4 teaspoon ginger, 1/2 teaspoon garlic, and 1 cup water (or pineapple juice) in a small saucepan to mid fire.

While the sauce is heating, combine the cornstarch and 1/3 cup of water in a small bowl until the cornstarch is completely dissolved.

Add cornstarch / water mixture to teriyaki sauce in skillet and continue heating until sauce begins to thicken. Remove from the heat and set aside.

For the salmon

Cut salmon into fillets for easier cooking. Pour 1/4 cup soy sauce into a small bowl. Dip each salmon fillet in soy sauce and rotate to coat.

Cook salmon with your preferred method or follow the steps in our post How to cook perfect salmon. This method is as foolproof as it sounds!

Cut the cooked salmon into strips about 1/2 inch wide.

For broccoli

Steam broccoli for 2-3 minutes until al dente. Cut florets and stems into thin strips (no more than 1/4 inch wide).

For the rice

Prepare 2 cups of rice according to package directions. We use a rice cooker. When the rice is done cooking, you can use it as is, or you can add a little traditional taste of sushi rice (1TB of rice vinegar, 1 tsp of sugar, 1 tsp of salt).

How to Assemble Teriyaki Salmon Hand Rolls

STEP ONE: Cut nori sheets in half lengthwise and cut 1 ″ from each end. Place a piece of nori in your workspace with the smooth side facing down. Dip your fingers in a small bowl of water to prevent the rice from sticking to your hands. Gather a handful of sushi rice and coat half of your approximately 1/3 inch thick nori sheet, leaving a small margin of rice-free seaweed on the edge.

SECOND STEP: Lay a strip of salmon and a few strips of broccoli diagonally across the top of the rice, pointing toward the top right corner of the sheet. Gently rotate the lower right corner of the nori diagonally toward the top of the blade, slightly rotating it as it forms a cone. Once you've gone all the way to create a cone, trim excess nori with kitchen scissors. Dip your fingers in your bowl of water and run along the edge of the nori you just cut until it is well moistened. Press on the cone to seal.

STEP THREE: Place your hand on a plate, with the sealed side facing down. Drizzle with your teriyaki sauce and serve with additional sauce on the side for dipping.

Teriyaki Salmon Rolls

Packed with flavor, Teriyaki Salmon Rolls are surprisingly easy to make at home!

Ingredients

  • 1 pound salmon

  • 1 1/3 cup water can pineapple juice sub for extra sweetness in sauce
