Ingredients:

  • 8 ounces bowtie pasta, cooked according to package directions
  • 3/4 cup teriyaki sauce (I used this island flavored teriyaki)
  • 1/4 cup of honey
  • 2 tablespoons of lemon juice
  • 2 tablespoons olive oil for sauce + 1 tablespoon for cooking chicken
  • 1 tablespoon of apple cider vinegar
  • 1 teaspoon of ground ginger
  • 4 boneless, skinless chicken breasts, cut into small pieces (about 1 1/2 pounds)
  • 1 cup peas
  • 1/2 cup carrots, diced
  • 1/2 cup yellow bell peppers, diced small (can be substituted for another color)

Addresses:

  1. Cook pasta according to package directions, drain and set aside.
  2. In a medium bowl or large measuring cup, add the teriyaki sauce, honey, lemon juice, 2 tablespoons of olive oil, apple cider vinegar, ginger and stir to combine; set the sauce aside.
  3. In a large skillet, add 1 tablespoon olive oil, add chicken, sprinkle generously with lemon pepper seasoning, and cook chicken over medium-high heat for about 5 minutes, flipping intermittently so all sides cook. uniformly. The cooking time will vary depending on the thickness of the chicken breasts and the sizes of the pieces. Chicken must be 90% cooked.
  4. Add the sauce carefully and note that it can bubble in the first few seconds.
  5. Let the sauce simmer for about 5 minutes, or until the sauce has thickened and reduced a little, and the chicken is well cooked. Stir the sauce and flip the chicken on and off everywhere.
  6. Add the pasta and vegetables to the skillet with the chicken and stir to combine and cover. Serve immediately. I prefer the warm and fresh recipe, but I can serve it cold as a cold pasta salad. It will keep in the refrigerator for up to 3 days. Reheat gently before serving if desired.
