- 3 sweet potatoes cut lengthwise
- 4 roma tomatoes cut in half
- 2 tablespoons of olive oil
- 150 g of tender spinach
- 1 avocado, sliced
- 3 tablespoons of honey
- 2 tablespoons of red wine vinegar
- 1 tablespoon of olive oil
Preheat the oven to 200C.
In a bowl, place the sweet potato, tomatoes, salt, and pepper.
Add the olive oil and stir well so that the vegetables are well covered.
Place the sweet potato and tomatoes on a baking sheet lined with parchment paper and bake for 25 minutes until the sweet potato is golden brown and smooth.
Cut the sweet potato into pieces.
Dressing: Combine all ingredients.
Place the spinach and avocado in a bowl and top with sweet potato and tomatoes.
Pour over the dressing and serve.
