Sweet potato salad

Ingredients

  • 3 sweet potatoes cut lengthwise
  • 4 roma tomatoes cut in half
  • 2 tablespoons of olive oil
  • 150 g of tender spinach
  • 1 avocado, sliced

Bandage

  • 3 tablespoons of honey
  • 2 tablespoons of red wine vinegar
  • 1 tablespoon of olive oil

Method

  1. Preheat the oven to 200C.

  2. In a bowl, place the sweet potato, tomatoes, salt, and pepper.

  3. Add the olive oil and stir well so that the vegetables are well covered.

  4. Place the sweet potato and tomatoes on a baking sheet lined with parchment paper and bake for 25 minutes until the sweet potato is golden brown and smooth.

  5. Cut the sweet potato into pieces.

  6. Dressing: Combine all ingredients.

  7. Place the spinach and avocado in a bowl and top with sweet potato and tomatoes.

  8. Pour over the dressing and serve.
