This time I share in RecetasGratis a simple dish, full of flavor and color. It is a flourless quiche (or a savory tart) filled with tofu, spinach and lots of vegetables. But the best thing about this recipe is that I have not used any flour or margarine or other saturated fats to prepare the base. It is totally healthy and is made from sweet potatoes. The filling doesn't have the typical quiche ingredients – eggs and cream – but it still feels smooth and creamy, so if you like healthy food, this version of sweet potato based quiche You're going to love it!

- 2 orange sweet potatoes or sweet potatoes
- 1 jet of oil
- 1 teaspoon of sweet paprika
- 1 onion
- 1 red pepper
- 3 tablespoons of corn
- 1 carrots
- 150 grams of tofu
- 1 cup frozen spinach
- 3 tablespoons of vegan sour cream (see recipe in my Free Recipes profile) or cream cheese
- 8 cherry tomatoes
- 1 teaspoon of turmeric
- 1 teaspoon salt
- 1 pinch of black pepper
Steps to follow to make this recipe: 1
Peel the sweet potatoes and cut them into thin sheets with a peeler.
Preheat oven to 180 degrees. Place the sweet potato slices on a cookie sheet, drizzle a little oil and sprinkle on the paprika. Bake the sweet potatoes until softened for 10 minutes. Keep an eye on the oven so it doesn't burn.
For prepare the base of the quiche without dough or flour you are going to need a cake pan with removable edges. Remove the edges and place a sheet of baking paper on the base of the pan. Position the edges without removing the paper. Next, place the sweet potato sheets forming a base for the light quiche, pressing with your hands so that they stick. Move the sheets up the edges of the mold so that the filling does not come off later, a height of 2 centimeters is enough.
Cut the whole vegetable into small cubes, including the cuttings of the sweet potatoes so as not to waste them and crumble the tofu. Cut the cherry tomatoes in half.
Cook the spinach Microwave for several minutes or in boiling water, then drain in a strainer to remove all the liquid.
Heat a frying pan with oil and sauté the vegetable of the sweet potato quiche for several minutes to soften.
Incorporate the spinach and cook for a minute.
Add the tofu crumbled and stirred so that it integrates well with the other ingredients.
Then add sour cream vegan, turmeric, salt and pepper. You can find the recipe for tofu sour cream in my Free Recipes profile or you can use any cream cheese. Cook the filling for 2-3 more minutes and fill the mold with the light quiche dough.
Decorate the sweet potato-based quiche with the cherry tomatoes and bake for 15 minutes. Let it cool a little, cut it into portions and serve.
