  • 2 pounds boneless, skinless chicken thighs
  • 1/4 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon of pepper
  • 3 oil tablespoons
  • 1 1/2 cups of peas
  • 1 cup yellow bell pepper
  • 1 cup red bell pepper
  • 1 small onion, sliced
  • 4 garlic cloves, minced
  • 6 tablespoons soy sauce
  • 3 tablespoons of rice vinegar
  • 1/4 cup brown sugar
  • 3 tablespoons of chili and garlic sauce (depending on your heat level)
  • 3 tablespoons of tomato sauce
  • Chopped green onions for garnish

  1. Cut the chicken thighs into thin strips and place them in a bowl. Add cornstarch, salt, and pepper and mix until combined.
  2. In a small bowl, mix together the soy sauce, vinegar, brown sugar, chili sauce, and tomato sauce until combined.
  3. Heat oil in a cast iron skillet or wok over high heat. Add chicken in batches and cook 5 to 6 minutes. Remove to a bowl and repeat until all the chicken is cooked.
  4. Add onions, peppers, and cook 2-3 minutes. Add the peas and garlic, cook another minute.
  5. Add back to the chicken and add the sauce mixture, mix until just combined. Simmer for 1-2 minutes so that the sauce thickens slightly.
  6. Serve with rice and garnish with green onion.
  7. ** If you want to adjust the heat level, just start with 2 tablespoons and give it a try
