Sweet and spicy flavors are almost always a sure victory for my family. However, coleslaw? That has not always been a reason to encourage. A few years ago, that changed when we tried this classic coleslaw recipe.
Since then, we have tried some amazing cabbage salad recipes. This sweet and spicy apple cabbage salad was eaten down to the last apple slice and cabbage ribbon.
The comment "The best coleslaw I've ever tasted" was heard and there was an echo of that from almost everyone at the table. Last night I did this for the dinner guests and I loved that everything turned out so well.
A certain brother of mine who is not a fan of coleslaw could have brought the bowl to his chair and finished until the last moment.
This was the first apple coleslaw we tried, but it certainly wasn't the last.
We have been making this sweet and spicy apple cabbage salad and the apple and cranberry cabbage salad for several years.

I love adding apples to traditionally tasty dishes like these roasted brussels sprouts with apples and bacon or this apple cranberry walnut salad. They add a delicious sweet bite to the plate and we all love it.
The sweet and spicy apple cabbage salad includes a couple of ingredients that I wouldn't have thought to include without chef John's inspiration.
When I saw corn kernels in the original recipe, I stopped and stared. I really don't even like corn nuts. It seemed so unusual that I had to try. And they worked!
Just a couple of tablespoons of crushed corn nuts changes the flavor and texture of the salad from very good to delicious. This is an excellent summer salad that I have made many times over the years.
Place the grated cabbage and apple slices in a bowl and mix to mix.
In a small glass cup or bowl, mix the mayonnaise, juice, sugar, tabasco, salt, and pepper until smooth. Taste and adjust the hot sauce as desired.
Pour the dressing over the cabbage mixture and stir to combine. Let stand for 5 minutes.
Add the coriander and stir again. Top with the crushed corn chunks and serve immediately.

Preparation time: 10 minutes.

Servings: 8 servings
- 1/2 small head of green cabbage, cored and very thinly sliced (about 6 cups)
- 1 Fuji apple, thinly sliced
- 1/3 cup mayonnaise
- 1/4 cup pineapple juice
- 1 teaspoon little sugar
- Tabasco sauce to taste, use several generous shakes, about 2 teaspoons
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper, adjust to taste
- 2 tablespoons coriander, chopped
- 2 tablespoons crushed toasted corn chunks, i.e. corn kernels, about 1 tablespoon crushed
