I totally do it, and I think there are some good options when you're in a time crisis, but most of the time when I buy something from there, I end up thinking I could have made this cheaper, healthier, and probably tastier! And that's how this summer fruit salad came about

That's what happened when I bought fruit salad with poppy seed dressing this summer. It just looked so pretty and colorful, all mixed with a creamy dressing. Well, I don't know if they used traditional poppy seed dressing containing canola oil, mustard, and mayonnaise, but to me, that doesn't belong in the fruit!
So the next day, I decided I would make my own version of the dressing, which usually involves some tartness, a little sweetness, and a few poppy seeds. For my version of the Summer Fruit Salad dressing, I decided to give it a light creaminess using coconut milk and adding the traditional ginger found in the dressing with a generous amount of lime. It was a simple dressing made with just 5 ingredients, but it totally outperformed store-bought prepared foods one by one mile … well, even 10 miles! Just try this combination of flavors and I am sure you will love it and you will eat more fruit and you will be happier!
It's fresh, spicy, and sweet and it's the kind of fruit salad you can make year-round with any fruit you have on hand!

This summer fruit salad recipe is made from fresh summer produce like watermelon, melon, molasses, and berries, and poured into a poppy-lime seed dressing

Ingredients
- 6-8 cups of choice fruits I used watermelon, molasses, melon, pineapple, mango, kiwi, strawberries and blueberries, blackberries
- 3 tablespoons of coconut milk
- 2 tablespoons of fresh lime juice
- 2 tablespoons of honey
- 1 teaspoon poppy seeds
- 1/2 teaspoon fresh grated ginger
Instructions

Place all washed / dried / chopped fruits in large bowl

In a small bowl, mix together the coconut milk, lime juice, honey, poppy seeds, and grated ginger until well combined. Try the dressing and adjust it as you see fit.

Pour the lime and coconut poppy seeds over the fruit and stir to combine.

Add fresh mint leaves, if desired, and serve cold.
