- 250 g of fresh strawberries
- 2 cups washed dry baby spinach
- 1/2 cup walnuts
- 1/4 cup white balsamic vinegar
- 1/2 cup of walnut oil
- 1 tablespoon icing sugar
Wash the strawberries, hull, and slices, place them in a large salad bowl, and reserve ¼ cup of strawberry vinaigrette.
Add spinach to strawberries.
Lightly toast the walnuts in a dry skillet. Cool slightly.
Meanwhile, sprinkle sugar over ¼ cup strawberries and start mashing with a fork, slowly adding the vinegar, until combined.
Add oil, whisking until ingredients have emulsified.
Mix the walnuts with the spinach and strawberries. Add strawberry vinaigrette just before serving.
Strawberry vinegar can be used.
