Sticky Pork Ribs Stew

Ingredients

  • 1 1/2 kg of pork ribs

Marinade

  • 1 tablespoon of brown sugar
  • 1/2 tablespoon of salt
  • 1 teaspoon of chili powder
  • 1 teaspoon of paprika
  • 1 teaspoon of mustard powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon dried oregano
  • 1/2 brown onion
  • 2 cloves of garlic
  • 100 ml olive oil

sauce

  • 1 cup brown sugar
  • 250 ml of malt vinegar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon of chili powder
  • 1 teaspoon powdered English mustard
  • 2 tablespoons of tomato sauce
  • 2 tablespoons Dijon mustard
  • 1 onion, finely chopped
  • 2 bay leaves
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • 1 chili, finely chopped
  • 1 orange peel, finely grated
  • 1/4 cup olive oil
  • 2 limes in quarters
  • 1 1/2 teaspoon of salt

Method

  1. Marinade: Mix all ingredients in a blender.

  2. Cover the pork ribs with the marinade, and then place them in the refrigerator for 3 hours.

  3. Heat up a barbecue plate. Drizzle oil over ribs, place ribs fat side up on barbecue, and cook 3-4 minutes on each side until sealed.

  4. Sauce: Put all the ingredients in a saucepan and bring to a boil. Reduce heat and simmer for 10-15 minutes until slightly thickened.

  5. Transfer the ribs to an ovenproof skillet. Pour the hot sauce over the ribs, cover with foil and bake at 180 ° C for 1.5 hours or until the meat falls off the bone.

  6. Turn 3-4 times during cooking.

  7. Squeeze the lime juice over the ribs and serve with steamed rice.

Notes

You can use pork belly.
