- 4 garlic cloves

We clean the squid well, wash, drain and cut them into rings. Then peel and chop a clove of garlic, clean and chop half of the parsley, add the chilli and we fry this hash for the squid with spinach over low heat in a saucepan with three tablespoons of olive oil for a few minutes.
Then, add the squid, stir with a wooden spoon, season and let them take flavor.
Then we add the wine and wait for the alcohol to evaporate. So add the tomato sauce, rectify with salt and cook for 45 minutes, stirring occasionally.

Meanwhile, we clean the spinach, wash and boil in a pot with boiling water and a little salt. Once cooked, drain them, cut them into small pieces and fry for 4 or 5 minutes In a frying pan with the rest of the oil that we have left adding a peeled and crushed garlic clove.
Next, we remove the garlic and add the spinach to the squid. We rectify salt if necessary and continue to cook 15 more minutes over low heat, stirring often.
We clean and chop the rest of the parsley and the garlic cloves that we have left, previously peeled and add them to the squid stewed with spinach when there are a few minutes left to finish cooking.
Once it is well done, we can serve the hot squid with spinach.
