- pancakes for cannelloni:
- 350 milliliters of semi-skimmed milk, lactose-free or vegetable-free
- 250 grams of cornstarch (fine corn flour)
- 3 egg
- 1 pinch of salt (to taste)
- 3 teaspoons of oil
- 1 pinch of butter or oil to spread the pan
- Stuffed with spinach and ricotta:
- 4 cups low-fat ricotta
- 3 cups chopped spinach
- 60 milliliters of olive oil
- Tomato sauce for topping:
- 60 milliliters of olive oil
- 1 large onion
- 3 garlic cloves
- 2.3 kilograms of ripe tomatoes, peeled and chopped
- 75 grams chopped basil
- 1 teaspoon dried oregano leaves
- 1½ teaspoons of salt (or to taste)
- ½ teaspoon of pepper (or to taste)
- 1 cup of pecorino or parmesan cheese
- 15 basil leaves
Steps to follow to make this recipe: 1
Prepare the cannelloni pancakes first. Pour the milk, oil, eggs, cornstarch and salt into a bowl. It integrates all the ingredients very well until achieving a homogeneous consistency and avoiding lumps. Leave the final preparation stand for 1 hour, thus it acquires more body.
Trick: You can use vegetable milk since it is healthier.
Over time, place a skillet (preferably non-stick) over medium-low heat. Immediately pour in a dash of oil or a tablespoon of butter. Spread and wait until it is hot. After a while, add the pancake batter using a soup ladle. Try to spread it evenly over the pan, until you create a thin layer. Cook until pancake edges brown, then take off. That is the right time to flip the pancake. Cook the other side for 5 to 10 minutes. Then, continue preparing the rest of the mixture and reserve the pancakes obtained.
Trick: This dough yields 18 cannelloni pancakes.
Meanwhile, cook the tomatoes that will serve for the sauce. You can boil or steam them. You will know they are ready when the skin cracks. Let cool slightly to remove the skin, without burning yourself. Then, mash with a fork or potato mash until a puree is created. Reservation.
Mix ricotta, spinach and basil in a deep bowl. Add the oil, season with salt and pepper to taste. Reserve the filling.
To prepare the cannelloni sauce, first heat the oil over medium-low heat. Step followed, add the onion and wiggle until it becomes transparent. Then add the garlic and wait until it is transparent too.
Add the tomato paste homemade and integrates with the other ingredients. Cover and cook until the mixture is cooked. Add the basil, oregano (preferably fresh), salt and pepper to taste. Stir and let the sauce consume a little.
Trick: Preheat oven 175 ºC.
Make the spinach cannelloni with pancakes placing the filling at one end.
Trick: Avoid overdoing it with the filling so that your cannelloni do not open.
Roll each cannelloni carefully to prevent them from opening or breaking.
Grease a tray and carefully place the ricotta cannelloni with pancakes next to each other. Take to the oven at 200 ºC and wait 5 minutes or until the cheese is gratin.
Trick: Reserve sauce, cheese and basil to cover the cannelloni at the time of serving.
Cut each cannelloni in two, then also chop the edges. This guarantees you an excellent presentation when serving. Sprinkle with sauce and cheese again. Garnish with a basil leaf, if desired. They are delicious!
