Spinach and strawberry salad with balsamic poppy seed dressing

I don't know about you, but with the warm weather, I like to have some lighter meals on our menu. Salads, one way or another, tend to be one of my "favorite" foods because they are light, they tend to be easy, and they are limitless!

If I get the option of a lettuce versus spinach salad, I will pick spinach every time. It is one of my favorite things to cook! Okay, technically, I'm not cooking spinach here, but humor me a little! I love that this salad is sweet and salty … crispy and smooth … creamy and salty, it has it all! And the best part? Strawberries are perfect this time of year! One of my favorite things about spring. is fresh strawberries and spinach.

My kids love this salad as much as I do, and honestly, what is there not to love? If you have more orange humor … or banana humor … or cranberry mood ….. or * insert your favorite fruit here * mood – of course, change it! Strawberry and kiwi are a tasty version … try strawberry and banana … mango and pineapple, whatever floats in your pot. You can't go wrong! If you like almonds, walnuts or pistachios … use them instead!

I didn't really specify any amount for this recipe, because I think it's more of a personal preference. Feel free to experiment! 🙂

Spinach and strawberry salad with balsamic poppy seed dressing

Ingredients

For the salad

  • Spinach leaves
  • Strawberries, shelled and sliced
  • Feta cheese, crumbled
  • Bacon, cooked and minced
  • Pecans, lightly toasted

For the dressing

  • 2 tablespoons roasted sesame seeds
  • 1 tablespoon. poppy seeds
  • 1/4 cup of sugar
  • 1/2 cup of olive oil
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon bell pepper
  • 1/4 teaspoon Worcestershire sauce
  • 1 tablespoon. chopped onion
  • Pinch of pepper

Instructions

  1. Place the desired amount of each salad ingredient on a plate in the order listed. In a food processor or blender, combine all of the dressing ingredients until well mixed, about 30 seconds to 1 minute. Sprinkle desired amount of dressing over salad. Enjoy!
