Spicy smoothie made of coconut cashews and white chocolate

The cold weather is starting to arrive (at least in the UK anyway), and I don't know about you, but I have no motivation to start my morning with a frozen smoothie!

I love hot smoothies, and I make a lot of variations: mocha oatmeal, apple, and elderflower, I even make a hot green smoothie (and no, it doesn't taste like soup!).

I originally did this for the lovely Lucy’s Craftberry Bush blog, and kindly let me share it with you too.

My hot shakes are delicious and comforting, but they can also be packed with nutrients.

This version is great for you: oatmeal, walnuts, maca powder (that's optional, but adds a mild caramel flavor), banana, coconut, and coconut milk. There is also a little chocolate to add a touch of sweetness.

My spicy coconut and white chocolate cashew smoothie is so smooth and creamy you'll feel like you're drinking something sinful!

Before you start making one of these delicious breakfast smoothies, keep in mind that for this recipe I am not adding any hot liquids to my blender.

Most of the ingredients are cold mixed, and the coconut milk and white chocolate are heated separately and then mixed at the end. It's definitely not a good idea to add hot liquids to your blender (or it will break the glass (if you have a glass jar) or it will come out with a ton of pressure when you open the lid after buzzing (clear stuff).)

So don't put that mixer away until next summer. I will wear mine until fall and winter!

Spicy smoothie made of coconut cashews and white chocolate

A hint of white chocolate with creamy cashews, coconut milk, and a few other nutritious treats make this HOT smoothie a delightful and warm winter breakfast.

Ingredients

  • 2 large pieces or 4 small pieces of white chocolate
  • 2 1/2 cups of refrigerated type fresh coconut milk, as Apro, instead of canned coconut milk
  • 6 tablespoons of oatmeal
  • 1 ripe banana the more ripe the better
  • 2 teaspoons maca powder optional
  • 20 cashews
  • 2 tablespoons of toasted coconut just place unsweetened coconut flakes in a hot oven for 1 minute to brown but be careful they burn quickly

Instructions

  • Add white chocolate to a jug and pour 2 cups of coconut milk. Microwave until the mixture is hot and the chocolate has melted (you can do it in a pan if you prefer).

  • Place the oatmeal, banana, maca powder, cashews, 1 tablespoon of toasted coconut, and 1/2 cup of cold coconut milk in your mixer or blender (do not add any hot liquids to your mixer or blender).

  • Mix over high heat for one minute until the oatmeal is fully incorporated (add an additional splash of cold coconut milk or water if it looks too thick to mix properly).

  • Divide the mixed oatmeal mixture between two cups and add the milk / hot chocolate mixture. Top with remaining toasted coconut and serve.
