But after trying various methods, I have a new trick that makes chickpeas crispy every time! My secret is to roast them dry (more on that below).

How to Roast Chick Peas

I've been disappointed with roasted chickpeas in the past, because I could never put them crispy! They always ended up chewy in the middle, rather than crispy. After trying and retesting, I finally found the secret!

My secret to CRISPIEST oven roasted chickpeas? Dry the roasts!

Here is my favorite method for roasting chick peas

  1. Rinse the chickpeas and spread them on a towel to dry.
  2. Spread the chickpeas on a baking sheet.
  3. Roast for 30 minutes, stir, then bake for another 5-15. Keep an eye on them for the last 15 minutes so they don't burn!
  4. Remove from oven, lightly drizzle with oil, then add spices. Spread again on the sheet to cool.

How do I know when my chick peas are ready? They will be dark and crisp to the touch. Have a taste tester, and if it's crispy and crunchy, you're good to go!

How long do roasted chickpeas last? They're good at room temperature for a week (probably longer, but they never last that long!)

Can I change the seasoning mix? Of course! Try one of these 7 spice mixes. I would try 2 teaspoons per 15 oz. Of chickpeas and increase if necessary.

Total time 50 minutes


  • 15 oz can of chickpeas (drained and rinsed)
  • spray oil (just a thin layer)
  • 1/8 teaspoon of salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon of paprika
  • 1 / 4-1 / 2 teaspoon cayenne


Roasted chickpeas

  • Heat oven to 425 ° F.

  • Drain and rinse the chickpeas, then spread on a clean towel. Rub with another towel to dry and let them sit for 10 minutes or so.

  • Arrange on a large baking sheet. Place in the oven and roast for 30 minutes.

  • Shake the pan and return to the oven for an additional 5-15 minutes. Watch them at this point so they don't burn!

  • Once the chickpeas are ready (they will darken a bit and become nice and crispy), remove them from the oven and carefully scoop into a large bowl.

  • Drizzle with oil until lightly coated, then add all the seasoning. Spread on the baking sheet to cool completely.

  • Store in a bowl or container for up to a week – you don't even need to cover them!
