Make no mistake, I love meat, but I also think it's good to give it up at least once a week, so why give Meatless Mandays a shot? Fairly cheap to manufacture and really not hard to manufacture. The hardest part is shaping them into patties, and even that is not so bad.

How to Make Black Bean Burgers

These cook best if frozen, so plan to cook them up front and cook as needed. You can even double the batch to keep them on hand when you need them.

How to freeze

To store them in your freezer, freeze them on wax paper until they settle, approx. 2 hours, then transfer them to containers. Labeling them by name and date keeps them organized.

Spicy Black Bean Burgers with Chipotle Mayonnaise

For Spicy Chipotle Mayo:

  • 3 1/2 tablespoons light mayonnaise, Hellman's
  • 1 tablespoon canned chipotle in adobosovs

For Black Bean Burgers:

  • 16 oz black beans can be rinsed and drained
  • 1/2 red bell pepper, cut into 2 inch pieces
  • 1/2 cup chopped onions
  • 3 tablespoons chopped coriander
  • 3 cloves of garlic, peeled
  • 1 jumbo egg
  • 1 tablespoon of cumin foam
  • 1/4 to 1/2 teaspoon kosher salt
  • 1 teaspoon hot sauce
  • 1/2 cup quick oats, use gf oats for gluten free
  • 4 whole grain 100 calorie balls, Martins *
  • 1 small hazel avocado, cut thin
  • Combine mayonnaise and chipotle aside.

  • Dry the beans well after washing, extra moisture will prevent the burgers from sticking.

  • Mash a bean with a fork in a medium bowl until thick and pasty.

  • In a food processor, finely chop peppers, coriander, onions and garlic, then add oats, then eggs and spices.

  • Then stir in mashed beans.

  • Divide the mixture into four chops (using lightly oiled hands to help) and place them on a flat surface covered with wax paper. (If it is too wet, cool the mixture for 30 minutes in the fridge or add another tablespoon of oats)

  • Freeze at least 2 hours before cooking, or keep frozen until ready to cook.

  • Heat a lightly sprayed pan to medium heat, and cook frozen burgers approx. 7 minutes on each side.

  • When grilling, preheat the grill on medium heat, and lightly oil a layer of aluminum foil; grill 7-8 minutes on each side or you can bake in the oven at 375 ° on a lightly oiled baking sheet.
