Two more days and 2018 will be over. I don't know about you, but for us, the year has just passed. And it was a good year for the top.

We have done a lot this year, we have accomplished a lot. We travel. I grew this blog. He turned this blog into a (side) business. He was adopted by our new cat.

It is logical that we celebrate the end of the year with a tasty delicacy, don't you think?

And don't worry, in 2019 we already have a lot planned.

These Speculaas Cookie Bliss Balls are a quick and delicious party gift that everyone will love. Somehow we always do them on New Years Eve, so we thought we would share them with you this year.

To make these Speculaas Cookie Bliss Balls we use vegan Almond Speculaas cookies (we got them from our Hofer grocery store). If you can't find similar cookies, just use simple vegan cookies.

Then just crumble the cookies, put them in your food processor along with coconut flour, ground coffee, cocoa, sugar and vegan butter. Add a drop of dark rum or bourbon and mix to combine.

If you don't have a food processor, add the crumbled cookies to a ziplock bag and rotate with a rolling pin, then mix everything by hand in a bowl (so I did before buying my food processor).

And that's it! Just refrigerate so the ingredients combine, form balls of joy, roll up some coconut, and you're ready to serve and eat! 🙂

We recommend enjoying these at midnight with a glass of champagne while watching the fireworks!

Speculaas Almonds Cookie Bliss Balls {Vegan}

These Speculaas Cookie Bliss Balls are an easy party snack that everyone will love! A true vegan gift ready in just 15 minutes.

Ingredients

  • 200 grams of spekulaas almond cookies
  • 80 grams of coconut flour
  • 1 teaspoon of ground coffee
  • 1 tablespoon of cocoa
  • 2 tablespoons of sugar
  • 130 grams vegan butter
  • 1 teaspoon dark rum or bourbon

Instructions

  1. Crumble the cookies in a food processor. Add sugar, coconut flour, cocoa, coffee, and rum and mix until a crumble-like dough forms.
  2. Add vegan butter at room temperature, cut into small pieces, and knead well with your hands until you have a cookie dough. Cover the dough with aluminum foil and transfer it to the refrigerator for one hour.
  3. Once the dough cools down, form small balls of cookies and roll them in a little coconut flour.
  4. Store in an airtight container in the refrigerator.
