When life gives you avocados, make TOASTS!

Admittedly, I've posted a total of zero recipes for avocado toast so far, but what this blog lacks in quantity of avocado toast, makes up for the quality of avocado toast. Starting now.

I mean, just think about it. Dripping egg, crispy bacon, creamy avocado? The jam of life. Maybe a pinch of black beans + corn + chilies for a touch of fesca? Ohhhh mom, there is nothing better.

For the "avocado" portion of this toast, I used Sabra's Veggie Fusion guacamole, the flavor of the southwest to be exact. You can change these toasts to your liking. Some suggestions:

  • Use any variety of Sabra Guacamole Veggie Fusions.
  • Prepare scrambled eggs instead of the sunny side up.
  • Add vegetables like sweet potato and spinach to this mixture.
  • Make a sammie for breakfast (instead of an open face) and take it to go!
  • Change the beans to your liking.
  • Add salsa and refried beans for a huechos rancheros on these breakfast toasts.

When in doubt, just add guacamole.

Southwest Breakfast Avocado Toast

Preparation time: 15 minutes.

Cook time: 15 minutes.

Total time: 30 minutes


  • 4 4 peices toasted multigrain bread *

  • 1 ounce container Sabra Guacamole Southwest 7-

  • 1/4 cup black beans drained and rinsed

  • 1/4 cup corn kernels

  • 1/4 cup finely chopped red onion

  • 1 small heirloom tomato, diced

  • 4 4 pieces cooked thick cut bacon

  • 4 4 eggs sunny side or fried

  • Sea salt and pepper to taste


  1. Spread guacamole on 4 pieces of toast. Top with black beans, corn, tomato, red onion, cooked bacon, and sunny-side-up egg. Serve and enjoy!
