I have an extremely demanding dining room in my home. You have probably heard me mention that my child will not eat a vegetable that is out in the open, and that I have to sneak it into his food. You've also heard me mention my husband's disdain for cauliflower. And I must confess that I really don't enjoy raw or plain cauliflower. So this is another sneaky, vegetable-infused recipe that my son and husband adored. My son actually dismissed it, asking no questions. Probably because there was nothing green in it. Usually ask "what did you put in this?"
My older children also loved it. Because it is baked in the oven and cauliflower is not steamed or boiled, you will not get that very strong smell throughout the house. Just a slight smell inside the oven. I told them what was in it, after they discarded it, and they still wanted seconds. I was so happy that they enjoyed the cauliflower.
Cauliflower is a cruciferous vegetable that has anti-cancer properties, excellent fiber content, contains antioxidants and is anti-inflammatory!
