Smoked Stuffed Eggs

Stuffed eggs are one of my favorite appetizers. On the one hand, they are instant proteins. A serving of these (2 halves) has 6 grams of protein. I even like to add them to the side of my salad when I don't have enough protein in my salad.

One of my dorm boys in particular LOVES stuffed eggs – they are an easy source of protein, so I don't mind sharing!

Depending on where you live, these may also be an inexpensive protein option. Unfortunately, where I live in Montana we are paying around $ 1.88 per dozen. But in Ohio, where my mom lives, I was recently paying less than $ .30 a dozen! We just bought our own chickens, and they should start laying in a few weeks. I am so excited to have my own egg platter!

The idea of ​​the smoky flavor came from my husband. He also loves stuffed eggs, but he also loves anything "smoked." Smoked cheese, smoked meat, etc. The smoky flavor of these smoked stuffed eggs comes from both smoked paprika and liquid smoke.

I used my instant pot to boil / steam the eggs. This is one of my favorite ways to use my Instant Pot! I hope to have a post soon dedicated to how to make boiled eggs using my IP. If you've ever had a hard time peeling eggs, you should be on the lookout for that post. IP eggs are SO easy to peel!

So what do you need for these Smoked Stuffed Eggs?

12 boiled eggs

½ cup mayonnaise

½ teaspoon onion powder

½ teaspoon garlic powder

½ teaspoon of salt

¼ teaspoon smoked paprika

½ teaspoon of liquid smoke

Instructions

  • Cut cooked eggs in half lengthwise and remove yolk.

  • When all the yolks are removed, add the remaining ingredients to the yolks and mix well. (I used my hand mixer).

  • Put the yolk mixture in a pastry bag and put it in the centers of the egg whites. (See note below.)

  • Sprinkle with additional smoked paprika and parsley, if desired.

Notes

If you don't have a pastry bag or pastry tips, you can simply cut the corner of a Ziploc bag and use it to channel the filling. (Or if you don't mind the pipe, just fill them with a spoon!) You can use bell pepper for this recipe, but I highly recommend the smoked bell pepper.
