Smoked White Bean and Vegetable Pasta Sausage with Spinach, Peppers, Zucchini, and Asparagus is packed with protein and just delicious.

Most afternoons when my husband comes home, I've been too busy entertaining our one-year-old son and trying to rebuild the house to think about what's for dinner! He will come home starving and I will do what I usually do: look for old recipe books or open pinterest to find a dinner idea.

I love doing something new most nights, but on nights when I'm exhausted, it has to be something I can put together pretty quickly, and going to the store for a missing ingredient is out of the question!

That's why you probably never end up following a recipe. I like to draw inspiration from a recipe and then use what I have on hand to make something equally delicious! This food is an example of that! I used the vegetables I had in the fridge, the noodles I had on hand and viola! A delicious and FAST dinner!

I also like to mix when it comes to the meats we eat with our meals. We often try a meatless meal, such as this spaghetti pie or black bean burger with chipotle mayonnaise sauce, and when we eat meat, the same old chicken and meat dishes can be boring! That's where Polska Kielbasa comes in!

I should make an announcement or something for them because I really love them! I used turkey in this recipe, just because it's healthier and still tastes A-Mazing, but you can use any sausage you want. This smoked sausage, white beans, and veggie pasta is the perfect, quick meal for the week night, ready in under 30 minutes!

Smoked Sausage, White Beans and Vegetable Pasta

Ingredients

  • 14-ounce package of Polska Kielbasa sausages (turkey or beef), cut diagonally into ¼ ”slices

  • 2 teaspoons of olive oil

  • 1/4 onion, diced

  • 1/2 bell pepper (any color) diced

  • 6 ounces farfalle pasta, cooked and drained

  • 1 medium zucchini, thinly sliced

  • 5-10 spears of fresh asparagus, cut into thirds

  • ½ cup vegetable stock

  • 2-3 tomatoes, diced

  • 15-ounce can white beans, drained and rinsed

  • 2 cups baby spinach leaves

  • 1/4 cup freshly grated Parmesan cheese

  • ¼ cup toasted pine nuts

Instructions

  • In a large pot, boil the water and cook the pasta according to the package. Drain and set aside.
  • In a large skillet over medium heat, toast the walnuts until golden.
  • Transfer to a plate. In the same skillet, heat the olive oil over medium-high heat and sauté the polska kielbasa, onion, and peppers for about 5 minutes, or until the sausage is browned on both sides. Transfer to a plate.
  • Add the zucchini, asparagus, and vegetable stock to the skillet and simmer for about 5 minutes.
  • Add tomatoes, beans, and spinach and continue to simmer for 1 to 2 minutes, until the spinach wilts.
  • Lower the heat, add the pasta and the smoked sausage with onion and peppers to the pan. Mix to combine.
  • Add fresh Parmesan cheese. Garnish with toasted pine nuts. Serve warm.
