I have this thing with smoked sausage; the kind you buy in the vacuum-sealed package in a giant link at the grocery store.
I absolutely LOVE them.
They are already fully cooked, so you just have to brown them in the skillet, but the best part is the flavor.
I just love the smoked flavor, and to me it's kind of like eating a hot dog for dinner, haha

They have many kinds out there now.
We usually buy beef, but that's what we like.
They have pork, beef, a beef / pork mix and even turkey!

Is the sausage already cooked?
Yep! But you still have to "cook" it.
Can I buy fresh?
I haven't tried it with fresh! Typically with fresh sausage, you should take it out of the casing and crumble it unless you want to cook it in the casing yourself, and it just takes too long!
This is not the dish for it. You want sausage already cooked so you can slice!
Can I use different kinds of peppers?
You can use the colors of the peppers you like.
What type of rice can I use for smoked sausage and pepper with rice recipe?
I always have sushi rice available. That's just what we always have because I grew up on it.
You can use any white rice like jasmine, basmati, etc., but definitely do not use arborio!
Will the cooking time vary depending on the rice I use?
Yep. It may also take more or less liquid to prepare the specific rice. Just watch it.
Should sauce be watery texture or thick?
For ours, because of the rice we used and because the rice has a lot of starch, the "sauce" coated the rice and there was no liquid left!
Is this spicy?
Yes, but you can make it less spicy by using less spices.
Can I make this spicier?
Of course. Suit to taste!

Smoked sausage and peppers with rice
This flavorful rice dish is elevated with the smoked sausage and bell pepper that adds a sweet bite! Preparation time: 10 min. Boiling time: 30 min. Total time: 40 min. Course: Dinner Cuisine: American Calories: 693kcal
- 13 ounces of smoked sausage, beef or pork, sliced into rounds
- 1 medium yellow onion, dice
- 2 cloves of garlic, chopped
- 2 medium sized peppers, sliced (your favorite colors)
- 2 cups of white rice
- 8 ounces can tomato sauce
- 4 cups chicken broth
- 1/2 tsp creol spices (if you don't have this, 1/2 tsp cayenne pepper works too)
- Salt and pepper, to taste
- Add 1 tablespoon of oil to a heavy bottom pan, such as a Dutch oven, and heat over medium-high heat.
- When hot, add the smoked sausage and leave brown on both sides.
- Add the onion, garlic and bell pepper. Cook until softened, approx. 3 minutes.
- Add the rice and shake it slightly in the pan before adding the tomato sauce. Add tomato sauce and chicken broth and spices. Cook up, then cook down, let it cook for 20-25 minutes, or until rice is done.
