Slow Cooker Steak Fajitas

Beef strips, bell peppers, and onions cook slowly with Mexican seasonings and a generous lime juice to make these slow cooker steak fajitas one of the easiest meals to prepare.

Several years ago, I stumbled across this fajita recipe on Andie Mitchell's site, Can You Stay for Dinner? Their slow cooker chili steak fajitas sounded too delicious not to try as soon as possible.

To make beef fajitas in the slow cooker, simply add all the ingredients, except the bell peppers, to the slow cooker and simmer until the meat is tender. Mix the peppers just before serving and let them soften for about half an hour.

With just the right amount of heat for my liking, I've already made another version of these chicken crockpot fajitas. All spices can be adjusted to your preference. My husband and children really enjoy both versions of the fajitas and they have become regular meals on our menu plan.

KITCHEN TIPS FOR KITCHEN FAJITAS

The total cooking time for the fajitas will vary based on your slow cooker. I have done this several times and in different slow cookers. Cooking time really varies a lot. The first time you do this, you'll want to check the meat after it's been cooked for a few hours and turn off the heat before it falls apart.

The thickness of the meat strips will also affect the cooking time. I like to cut ours super thin, maybe 1/8 inch or so, and as a result the meat will cook in about 4 hours. If too much of that happens, the meat starts to fall apart. Still delicious, but not the steak strips you're looking for here.

This recipe doubles or triples very well to feed more people. However, the cooking time will need to be adjusted for that. So, as noted above, check the meat to determine if it is ready.

Slow Cooker Steak Fajitas

Ingredients

  • 1 pound very thinly sliced ​​beef steak
  • 1 medium onion, cut into thin strips, 1 to 1 1/2 cups
  • 2/3 cup sauce
  • 2 tablespoons freshly squeezed lime juice, this was less than the juice of a medium-size lime
  • 2 tablespoons minced jalapeños
  • 2 garlic cloves, minced
  • 4 teaspoons taco seasoning I used my homemade spice
  • 1/2 teaspoon of kosher salt
  • 2 bell peppers I like to use red and green together, cut into strips

Instructions

  • Place the onion and steak in the bottom of the slow cooker. Mix sauce, jalapeños, lime juice, taco seasoning, garlic, and salt in small bowl, then pour over steak and onion in saucepan. Gently mix to coat. Cook on the lowest temperature for 4-8 hours. (see cook's note)

  • Once the meat is cooked and tender, add the peppers and cook another 30-60 minutes, until softened to your preference.
